I bet you already know about butter and maybe you have seen or heard of ghee. Butter is very present in our culture and cuisine, to be spread on a sandwich for breakfast or used in a more elaborate recipe. It is of animal origin, derived from cow or buffalo milk, it is creamy, tasty and can be used in various preparations. Ghee is the healthiest part of butter, it is considered a healthy fat and can also be used like traditional butter.
With veganism in evidence, vegetable butters also appear, also widely used in the kitchen, which bring a new look to this product segment. Basically, you need a full-fat vegetable or animal milk to combine the solid particles of fat to form butter. For traditional butter, the creamier the fresh cream is, the faster the butter is obtained. You know that story that if you whip too much whipped cream it turns into butter? That’s right, when the chantilly is whipped excessively it reaches the tip of the butter, just add the bits of fat and pass them in very cold water, after all the butter would melt in the heat of your hands. You just have to season the butter or not and then shape it by hitting it with the spatulas. You can store it refrigerated or not as long as it doesn’t come in contact with oxygen.
Ghee is derived from traditional butter, to get this rich fat you need to heat the butter until it melts and decant. Its solid parts of milk, such as casein, go to the bottom and a foam rises which must also be removed. Ghee is strained and can also be flavored with herbs. In addition to using ghee as a butter in breads and recipes, it can be used for frying and frying potatoes. Its smoke point, or the time it takes to burn with heat, is greater than that of traditional butter and is considered a healthful fat.
