Shrimp in pumpkin

Difficulty: easy

Ingredients:

  • 1 whole strawberry (3 kg)
  • 3 tablespoons of olive oil
  • 1 diced onion
  • 2 minced garlic cloves
  • 800 g of cleaned medium prawns
  • 2 ripe tomatoes, peeled and deseeded, diced
  • Salt, black pepper and chopped parsley to taste
  • 1 cup of catupiry® type curd

Method of preparation:

  1. Wash the pumpkin, open a lid and remove the seeds with a spoon.
  2. Cover and place in a large pot.
  3. Cover with water and cook for 30 minutes or until softened without falling apart.
  4. Drain and season the inside with salt.
  5. Heat a frying pan with olive oil over medium heat and saute the onion and garlic for 3 minutes.
  6. Add the prawns, tomato, cream, salt, pepper and cook for 5 minutes.
  7. Remove it from the heat and add the green smell.
  8. Line the bottom of the squash with the catupiry®, pour in the stew and cover with the rest of the catupiry®.
  9. Put it in a form and take it to the high oven, preheated, for 15 minutes.
  10. Serve accompanied by white rice.
