  • 1 pinch of oregano

Method of preparation

In a bowl mix the chickpea flour with the rice flour, salt, water and oil. Knead until your hands get dirty and turn into a ball of dough. On a surface floured with rice flour, unfold the dough evenly, place it in a form greased with olive oil and set aside.

Filling

In a container, cover the cashews with hot water and set aside for 15 minutes. Place 1 tablespoon olive oil in a skillet and heat over medium heat. Saute the onion and garlic. Then put the sliced ​​zucchini and sauté for 2 minutes. Add the tomatoes and season with salt and oregano. Mix well, turn off the heat and set aside.

In a blender, beat the cashews with the sauce water, 1 tablespoon of the olive oil and the nutmeg for 2 minutes. In another pan, pour this cashew mixture and bring to medium heat, stirring constantly, until it thickens. Then put the chestnut cream in the braised courgettes and mix well. Pour the filling over the pasta and bake in a preheated oven at 200°C for 30 minutes.
