Ingredients:

  • 1 tablespoon of olive oil
  • 2 minced garlic cloves
  • 500 g seedless tomatoes, halved
  • salt to taste
  • 1/2 teaspoon crushed red pepper
  • 1 pack of spaghetti (500g)
  • 2 bunches of chopped rocket

Method of preparation:

  1. In a skillet, over medium heat, heat the oil and saute the garlic until golden brown
  2. Add the tomatoes, salt and pepper and cook for 15 minutes
  3. Meanwhile, stir occasionally.
  4. Remove from heat and set aside
  5. Cook the pasta according to package directions, then drain.
  6. Add the rocket, mix and transfer to a plate.
  7. Cover with the sauce and serve immediately.

Ingredients:

  • 1/2 cup bacon (diced)
  • 2 cups chicken (diced)
  • Salt and black pepper to taste
  • 1/2 package of macaroni quills (250g)
  • 1 cube of chicken stock
  • 2 boxes of ready white sauce (400g)
  • 2 cups cream (fresh milk)
  • 2 cups of cold water (tea)
  • Chopped parsley and grated parmesan for dusting

Method of preparation:

  1. In a large pressure cooker, over high heat, saute the bacon until it releases all the fat.
  2. Put the chicken and fry until golden brown
  3. Season with salt and pepper
  4. Turn the pan off and then add the pasta, chicken stock, béchamel sauce, heavy cream, and water.
  5. Cover the pan and cook over low heat for 5 minutes after starting the pressure.
  6. Turn off, wait for the pressure to release naturally and open the pan.
  7. Serve then sprinkle with parsley and Parmesan.

Ingredients:

  • 1 1/2 cups (tea) fresh basil leaves, washed and dried
  • 1/3 cup (tea) olive oil
  • 1 small clove garlic, diced
  • 4 tablespoons pine nuts, Brazil nuts or cashews
  • 4 tablespoons of grated pecorino or parmesan
  • 1 teaspoon of salt
  • 1 package of spaghetti cooked al dente and drained (500g)
  • Grated Parmesan for dusting

Method of preparation:

  1. Blend the basil, olive oil, garlic, pine nuts, cheese and salt in a blender until smooth.
  2. Drain the pasta, save the cooking water and pour it into a bowl. Drizzle with the sauce.
  3. Clean the wall of the blender with about 1 ladle of the cooking water kept aside, blend and pour over the pasta.
  4. Stir, sprinkle with Parmesan and serve.

Macaroni carbonara au gratin

Ingredients:

  • 1 pack of macaroni quills (500g)
  • Salt, black pepper and grated nutmeg to taste
  • 200 g of diced bacon
  • 3 gems
  • 4 tablespoons of grated Parmesan
  • 4 tablespoons of breadcrumbs

Method of preparation:

  1. Cook the pasta in boiling salted water for the time indicated on the package or in any case al dente and drain.
  2. Meanwhile, in a skillet, saute the pancetta in its own fat over medium heat, stirring until browned.
  3. Drain on absorbent paper.
  4. Mix the macaroni, bacon, whipped cream with the egg yolks, salt, pepper and nutmeg.
  5. Mix and pour into a medium refractory.
  6. Sprinkle with cheese and flour and place in a high, preheated oven for 10 minutes.
  7. Serve immediately.

  • 3 tablespoons of olive oil
  • 1/2 chopped onion
  • 250 g of diced cooked ham
  • 2 tablespoons of tomato paste
  • 1 cup diced tomatoes (peeled)
  • 3 cups of hot water (tea)
  • 1 sachet of vegetable seasoning powder
  • 1/2 package of pasta quills durum wheat (250g)
  • 200 g of diced mozzarella
  • Salt and fresh basil to taste
  • Grated Parmesan for dusting

Method of preparation:

  1. Heat a large non-stick frying pan with the oil and fry the onion and ham for 3 minutes.
  2. Add the extract, the peeled tomatoes, the hot water, the seasoning powder, the pasta and cook, stirring occasionally, until the pasta is al dente.
  3. Add the mozzarella, salt, basil and cook for another 1 minute.
  4. Turn off, sprinkle with parmesan, basil and serve.
