Bacon and Farofa Cornmeal Ingredients:
1/3 cup bacon (tea), diced medium
2 tablespoons unsalted butter
2 tablespoons of olive oil
1 tablespoon(s) onion, diced.
1 clove(s) garlic, minced.
1 cup(s) cornmeal flakes
1 stalk(s) celery 7 cm long, diced
1/2 unit(s) red pepper, deseeded, minced.
salt to taste
pepper to taste
THE
parsley to taste, chopped, to finish.
PRE-PREPARATION:
- Gather all the ingredients and utensils for the recipe.
- Remove the skin from the bacon and cut it into medium-sized cubes; discard parts with a lot of fat.
- Wash, peel and cut the onion into small cubes. Peel and mince the garlic.
- Remove the seeds from the girl’s finger pepper and chop.
- Cut the celery stalk(s) in half lengthwise and then cut into cubes.
- Pique the parsley to finish, let it dry on absorbent paper.
PREPARATION:
Farofa Bacon and Cornmeal:
- Heat a deep skillet over medium heat, add the bacon cubes and stir occasionally, until golden brown and dry. Remove them from the pan and set them aside on a paper towel.
- Drain the excess fat from the pan and add the oil and butter.
- When the butter melts, reduce the heat, add the chopped onion, the minced garlic clove/s and sauté until the onion is translucent.
- Next, add the chopped seedless peppers and saute for 1 minute.
- Add chopped celery, fry for 3 minutes.
- Gradually add the cornmeal, stirring to incorporate the seasonings.
- Add salt, pepper.
- Cook, stirring, until the flour is crisp, about 3 to 5 minutes.
- Add the bacon cubes and stir, cooking for another 1 to 2 minutes.
- Complete with the chopped parsley.
FINISHING AND ASSEMBLY:
- Serve the farofa with bacon and cornmeal in a bowl or arrange among plates to accompany the main course.
