1. Seafood risotto

ingredients

  • 200 g of cleaned prawns
  • 200 g of calamari rings
  • 200 g of mussels
  • 1 cup of arborio rice
  • 1/2 chopped onion
  • 2 minced garlic cloves
  • 1/2 glass of dry white wine
  • 4 cups of fish broth
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • Salt and ground black pepper to taste

Method of preparation

In a pan, heat the broth fish and keep it warm over low heat. In another pan, heat the oil and half the butter. Saute the onion and garlic until golden brown. Add the rice and stir for a few minutes until slightly translucent. Pour the white wine into the pan and stir until it evaporates. Start adding the hot fish broth, a ladleful at a time, stirring constantly and waiting for the broth to absorb before adding more.

While the rice is cooking, in another pan, melt the remaining butter and quickly brown the seafood. Reserve. When the rice is al dente and creamy, add the browned seafood and mix gently. season with salt and black pepper and stir. Serve the risotto on individual plates and enjoy your meal!

  • 300g of filet mignon in strips

  • 1/2 glass of dry red wine
  • 1 tea cup of milk cream
  • 2 tablespoons of butter
  • Salt and ground black pepper to taste
  • Grated Parmesan to serve

Method of preparation

Cook the noodles according to package directions, drain and set aside. In a large skillet, melt the butter and saute the onion and garlic until golden brown. Add the filet mignon strips and cook until browned. Pour the red wine into the pan and reduce by half. Reduce the heat and add the heavy cream, stirring until incorporated and heated through. Season with salt and pepper. Mix the sauce with the cooked noodles. Serve the fettuccine sprinkled with parmesan grated on top.

  • 1 red bell pepper, deseeded and chopped
  • 2 carrots, peeled and cut into sticks
  • 1.5 liters of vegetable broth
  • 1 1/2 tablespoons saffron
  • 1 cup of rice tea

Method of preparation

In a frying pan, put the olive oil and heat over medium heat. Add the onion and garlic and saute. add vegetables and fry until soft. Add half the vegetable stock and the saffron and bring to the boil. Lower the heat, add the rice, salt, black pepper and coriander to the pan and mix well. Gradually add the rest of the vegetable broth, stirring constantly, until the rice is tender. Turn off the heat and serve immediately.

4. Ground banana dumplings with dried meat

ingredients

  • 2 ripe bananas
  • 1 cup desalinated and shredded dried meat
  • 1 egg
  • 1 1/2 cups of wheat flour
  • 1/2 cup grated Parmesan
  • Salt and ground black pepper to taste

Method of preparation

Cook the plantains until very soft. Peel and mash them until you get a puree. In a bowl mix the mashed banana, egg, minced beef jerky, Parmesan, salt and black pepper. Gradually add the wheat flour until a dough forms that doesn’t stick to your hands. On a floured surface, roll out the dough cylinders and cut them into small pieces to form gnocchi. Cook the gnocchi in boiling water until they float to the surface. Drain the gnocchi and arrange them on a plate. Heat a pan with a drizzle of oil and lightly brown the gnocchi. 5. Chicken fricassee

ingredients

  • 1 jar of cream
  • 1 can of corn
  • 200 g of cream cheese
  • 100 g of pitted olives
  • 2 breasts of cooked and minced chicken
  • 200 g of sliced ​​mozzarella
  • 100 g of straw potato
  • 1 cup of water tea
  • Salt and ground black pepper to taste

Method of preparation

In a blender, put the green corn (along with the water in the jar) and the cream. Beat until you get a smooth cream. Reserve. In a pan, mix the chicken pieces, the whipped cream, the ricotta, the olives and the salt. Cook over medium heat for a few minutes, stirring, until all ingredients are well incorporated and heated through. In a refractory place half of the chicken mixture and cover with half of the cheese slices. Repeat layer with remaining chicken mixture and top with remaining cheese wedges. Bake in a preheated oven at 180°C for about 15 minutes, or until the cheese is melted and frothy. Remove from the oven and spread the straw potato over the fricassee. serve immediately.
