At the recent Rio Gastronomia event, Jefferson Rueda, chef and owner of the renowned restaurant “A Casa do Porco”, voted 7th best in the world by The World’s 50 Best Restaurants ranking, was present with his undeniable passion for pork. “For me it’s a dream come true when I hear ‘Your mortadella is different!.’ I answer: of course, mine goes with pork “, he said, eliciting the laughter of the audience by reiterating that they are right and excellent products.
Since childhood, Rueda has had a special relationship with the pig. According to the O Globo portal, in Rio Gastronomia, the chef shared details of his professional and personal career, even serving his sausages to those present. He recalled that, from the time he was seven, he cooked with his father, which had become an essential part of his routine. Later, he ventured into a butcher shop and eventually moved to São Paulo to work in a restaurant.
During his trip, Jefferson met Zé Luis Bertoletti, a producer who raised free-range pigs but focused only on piglets. It was Rueda who convinced him to fatten twenty pigs for a special event. This was just the beginning of a thriving partnership. Five years later, Jefferson opened “A Casa do Porco,” and his upward trajectory knew no bounds. In 2021 he opens the “Porco Real” fridge, where about twenty different types of sausages are produced.
At the event, Rueda also highlighted a revealing moment in his career: “It was when I realized that the best houses didn’t have pork on the menu. They had a lot of prejudices with pork. And I decided I was going to do a lot pork when I had my business.” Today, thanks to his dedication and passion, the chef is widely recognized for the exceptional quality of his dishes and products.
