Salmon in pink pepper sauce

Ingredients:

  • 4 salmon fillets, 8 cm each
  • 1/2 glass of dry white wine
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • Salt and white pepper to taste

Mashed potato

  • 800 g of cooked and squeezed mandioquinha
  • 2 tablespoons of butter
  • 1/2 cup (heaping) fresh cream
  • Salt and grated nutmeg to taste

Sauce

  • 2 tablespoons of butter
  • 1/2 chopped onion
  • 1/2 glass of dry white wine
  • 1/2 cup (heaping) fresh cream
  • 1 tablespoon of mustard
  • 1 tablespoon of pink pepper
  • salt to taste

Method of preparation:

  1. Arrange the salmon in a mold lined with aluminum foil and season with white wine, butter, oil, salt and pepper.
  2. Cover with aluminum foil and bake in a preheated medium oven for 30 minutes.
  3. On the side, in a saucepan, bring all the ingredients for the puree over medium heat, stirring until thickened.
  4. Hang up and book
  5. Meanwhile, for the sauce, heat a pan with the butter over medium heat and sauté the onion for 2 minutes.
  6. Add the wine and saute for 2 minutes
  7. Add the cream, mustard, pink pepper, salt, mix and turn off the heat.
  8. Remove the salmon from the oven, transfer it to a platter and serve immediately with the purée and sauce.
