A specialized jury evaluated the brands sold in supermarkets; check the ranking with the winning products and the evaluation of each brand

Sour cream is, by definition, the fatty part of milk. A cream that can be obtained by hand by letting the whole milk rest for several hours in a cool place.
The industrialized version of the product, as underlined in Maria Lucia Gomensoro’s “Little Dictionary of Gastronomy”, can generate creams with different degrees of fat. Canned has about 25% fat, similar to the canned version.
They are less fat products than the fresh version, sold in bottles kept under constant refrigeration and which have a fat content of around 35%. Only in this version you can whip whipped cream, for example.
In this Taste test, we evaluated 10 brands of canned and canned cream, a cheaper product than fresh cream and, therefore, consumed more intensively by Brazilians in the preparation of savory and sweet recipes.
To compose the team of judges, we invited chefs Marcelo Martino de Almeida, Douglas Benatti, of Enosteria, and Tássia Magalhães, of Nolita, as well as Luiza Pompeu and Mariana Gorsky, partners of Confeitaria Dama.
Together they blindly evaluated characteristics such as the taste, texture and appearance of each of the products. They tasted portions of fresh cream, straight from the package. And there were many differences found during the evaluation.
“Some tasted sweet, others a little salty; the color and texture also varied a lot between brands,” explains Douglas Benatti.
“I noticed a huge variation in consistency, some very gelatinous, some quite runny, which has a big impact when using the product in the preparation of a recipe,” Mariana Gorsky assesses. “In some brands you notice more fat, in others the taste of the milk is more evident.”
The test was carried out at the Confeitaria Dama de Pinheiros, in São Paulo. At the end of this text, the complete list of brands, in alphabetical order, with the judges’ comments.

Italics: a creamy milk with a fluid consistency, a pleasant taste and a beautiful appearance (R$ 4.99, the 200 g pack)
Furthermore: a product with a more yellowish color than the others; with a fat content present in the taste, also rated as slightly sweet (R$ 9.70, the 300 g can)
Giussara: a product with a consistency similar to fresh cream, a neutral flavor and a very light colour. It had a good balance in the three aspects: taste, appearance and texture (R$ 2.99, the 200g pack)
mocha: the cream was assessed as too runny, with air bubbles and slightly salty. Some judges found the taste far from what was expected of the product (R$ 2.19, the 200g pack)
Nestle: a full-bodied milk cream, with a yellowish color and a balanced flavor (R$ 8.99, the 300 g can)
Parmalat: the sample of our ranking had a delicate milk flavor, very close to that of fresh cream. The well-balanced texture was also appreciated by the judges (R$ 3.19, the 200 g pack)
Paul: a product with a balanced taste, slightly sweetened, very creamy and milky in appearance. The consistency of the cream was considered ideal for making sauces (R$ 3.29, a box of 200 g)
Piracanjuba: a milk cream with a gelatinous and low-fat consistency. The taste was rated as neutral (R$ 3.99, the 200g pack)
President: thicker cream than other canned products, with a delicate taste, similar to milk, and light in color (R$ 3.29, 200 g box)
Quality: a product with a darker color than the others evaluated. The consistency was judged to be very thick and slightly gelatinous; and the taste, far from what one would expect from a cream (R$ 8.49, the 300 g can)
