Honey cake with oats and banana
ingredients
- 2 mashed ripe bananas (about ¾ cup);
- 3 eggs;
- 4 spoons of honey;
- 1/3 cup vegetable oil (soy, corn or canola)
- 1 cup of oatmeal;
- 1/2 cup cornstarch;
- 1 pinch of salt;
- 1 tablespoon of baking powder.
Method of preparation
Preheat the oven to 180°C and grease a mold with a drizzle of oil and sprinkle with a little wheat flour. Mash the bananas with a fork to form a puree, add the eggs and mix. Gradually add the honey and oil, stirring gently, and add a pinch of salt and the oatmeal, stirring with a fork until incorporated into the mixture. Then add the cornstarch and mix again. Finish the dough with the yeast, mix quickly and then transfer into the previously greased and dusted mould. Cook for about 30 minutes. Allow the cake to cool before unmolding it.
