Banana Brigade:
- 2 ripe bananas, roughly chopped
- 2 tablespoons cocoa powder
- 2 tablespoons coconut milk powder
To decorate:
- 50 g of semi-sweet dietary chocolate (without sugar) or other of your choice, chopped
PREPARATION:
- Gather all the ingredients and utensils for the recipe.
- The standard recipe with 2 bananas makes about 10 candies of 20g each (weight when ready). Use very ripe bananas.
- Process the bananas. If you don’t have a food processor, mash the bananas well with a fork in a bowl.
- Add the other ingredients from the recipe with the bananas and mix or blend.
PREPARATION:
Banana Brigadeiro
- In a pan put all the ingredients of the recipe previously mixed.
- Bring to a low boil and stir constantly.
- Cook, stirring constantly, for 10 minutes or until it thickens and pulls away from the bottom of the pan — to be sure, tip the pan slightly to the side and see if the dough pulls away from the bottom.
- Turn off the heat and transfer to a plate, allow to cool slightly and cover with cling film.
- Leave to cool completely, then place in the refrigerator for 1 hour to firm up.
Banana Brigadeiro – Decoration:
- While the banana brigadeiro cools, prepare the chocolate that will be used in the decoration.
- Chop the chocolate with the tip of a knife on a cutting board into small pieces, forming “paslines”.
- Place the chopped chocolate in a bowl and set aside.
Banana Brigadeiro – Assembly:
- Open the ramekins on a plate.
- Wet your palms with water.
- Using a teaspoon (plate) as a measure, take a portion of the dough and roll it into a ball: the approximate weight is 12-15 g each.
- Dip the ball in the finely chopped chocolate until the entire surface is evenly covered.
- Accommodating the Red Brigade members in the moulds.
- Repeat the process until the ingredients are used up.
- Keep refrigerated.
FINISHING AND ASSEMBLY:
- To remove the banana sergeant(s). from the fridge just before consuming.
- Arrange on a serving plate and order the sweets well.
