Crunchy cassava cake with Coalho cheese:
- 325 g of grated cassava
- 75 g of grated ricotta
- 3 tablespoons of olive oil + a little to grease the pan
- salt

PREPARATION:
- The yield of this recipe is 3 units per serving (each dumpling = 2 tablespoons of dough)
- Preheat the oven to 200°C.
- Separate recipe ingredients and utensils.
- Wash and peel the cassava (if you didn’t buy it peeled) and grate it on the rougher side.
- Grate the coalho cheese on the coarse side.
- Grease the baking tray(s) with a little oil.
PREPARATION:
Crunchy cassava cupcake with Coalho cheese:
- Place the grated cassava in a clean cloth and squeeze out the excess water.
- Put it in a bowl and drizzle with olive oil.
- Add the grated rennet cheese, salt and stir to mix well.
- In the greased pans, make mountains of the batter, about 2 tablespoons per cupcake, and flatten them slightly so they’re in the shape of a disc.
- Leave space between the discs so they do not stick together during cooking.
- Place in a preheated oven at 200°C and cook for about 15-20 minutes or until they begin to brown.
- Turn the dumplings and cook for another 10 minutes or until browned on both sides.
- Turn off the oven and remove the trays.
FINISHING AND ASSEMBLY:
- Serve the crispy cassava dumplings with hot coalho cheese as a side dish to the main dish.
- They can also be served as a snack accompanied by cane molasses.
