- 200 g of Gruyere cheese
- 200 g of steppe cheese
- 200 g of Emmenthal
- Nutmeg and black pepper to taste

Phases
- Grate all the cheeses and set aside;
- In a medium saucepan, add the cheeses and wine. Mix everything over low heat until the mixture dissolves and becomes homogeneous;
- Season with black pepper and nutmeg and place in the fondue saucepan.
Wines to match

According to Deco, the best pairing for a cheese fondue is white wine. The first reason is that the recipe already includes white wine, so this is a golden tip: if you have a food that uses wine in its preparation, that type is usually the best.
The second is that the cheeses are fatty and salty and these characteristics do not fit very well with a drink with a lot of tannin, which gives that astringent and annoying sensation in the mouth. So look for full-bodied whites like Chardonnay, Riesling, and Semillon. Even the Portuguese from the Douro, Alentejo or Dão region will not disappoint you.

However, if you’re planning on including meat on your plate, there’s no escaping a full-bodied red wine to go with. Choose from Cabernet Sauvignon, Malbec, Cabernet Franc, Syrah, Carmenere and Tannat.
Chocolate Fondue

Dip fruit – strawberry, grape, banana, etc -, waffle or marshmallow into this chocolate dessert.

- 100 g of semi-sweet chocolate
- 100 g of milk chocolate
- 100 ml of milk cream
- 100 g of dulce de leche
Phases
- Bring the chocolate and cream over the heat in a double boiler, stirring constantly. Do not boil the water;
- After obtaining a homogeneous mixture, add the dulce de leche;
- Remove from the heat and put in the rechaud fondue with the sliced ​​fruit.
Wines to match

For the chocolate fondue, choose a sweet and intense wine – and not everyone can face this “struggle”. A good example is port wine, which is a fortified (more alcoholic) and sweet type. Accompanies with intensity and sweetness.
Spaniards from the Jerez region, produced with Pedro Ximenez grape, are also a good choice, as are some wines from the island of Madeira or the south of France, called Banyuls.
