A very easy to prepare low carb jabuticaba ice cream.
Recipe for 2 people.
Low carb, gluten free, vegetarian
Preparation: 00:15 + cooling time
Interval: 00:00

EQUIPMENT
conventional + blender
METERS
cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients for creamy Jabuticaba ice cream
– 200 g of ripe jabuticaba
– 80 ml of water, filtered
– 80 ml of milk
– 80 ml of fresh cream
– 1 and 1/2 tablespoons of xylitol (or other product of your choice)
– 2 tablespoons of powdered milk
Ingredients for decorating
– mint to taste (leaves)
PREPARATION:
1. Wash the jabuticaba well.
2. Wash the mint leaves to finish and set aside on paper towels. Start preparing the ice cream (see preparation).
3. Separate other ingredients and utensils from the recipe.
4. Place the other ingredients of the recipe (water, milk, milk powder, fresh cream and xylitol) into the blender jug.
PREPARATION:
Creamy Jabuticaba ice cream: (do this step before starting the preparation)
1. Set aside a few whole jabuticabas for finishing.
2. Press the fruits with your fingers, place them in a pan and cook over low heat for about 10 minutes.
3. Continue pre-preparation.
Creamy Jabuticaba ice cream:
1. Once the jabuticaba are soft, remove them from the heat.
2. Filter and eliminate lumps.
3. Place the jabuticabas (peels and pulp) in the blender glass along with the filtered water, milk, milk powder, cream and xylitol.
4. Beat well (to dissolve the jabuticabas skin well) until the mixture is smooth.
5. Place in a plastic pot or baking dish, cover or cover with cling film and freeze.
6. If you want an even creamier result, beat again after 1 hour and place back in the freezer.
FINALIZATION AND ASSEMBLY:
1. Just before serving, remove the ice cream from the freezer.
2. Prepare some ice cream scoops and serve, preferably, in cups.
3. Decorate with whole jabuticaba and mint leaves.
