Breaded chicken skewer, inspired by what you eat on the street, but tastier, because without wheat and without frying
Wheat-free breaded chicken skewers, golden and super crispy.

CHICKEN SKEWER Ingredients
– 400 g boneless, skinless chicken thighs, cut into medium cubes (or boneless chicken breast)
– 1/2 unit of lemon (juice)
– onion powder to taste THE
– garlic powder to taste THE
– Salt to taste
– pepper to taste THE
– 4 x BBQ Skewers
Milanese ingredients (without wheat)
– 1/4 cup(s) white cassava flour
– 1 unit of egg, diluted in a little filtered water
– Salt to taste
– pepper to taste (optional) THE
– 1/4 tablespoon(s) of paprika THE
– 1/2 cup(s) cassava flour or enough for breading.
– oil to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Place the barbecue skewers on an auxiliary plate and leave them to soak covered in water: this will prevent them from burning during cooking.
- This recipe yields 2 skewers per person.
- If you have biju cassava flour, choose it instead of cassava flour, so the skewers will be even crunchier.
PREPARATION:
Chicken Skewer – Seasoning and Assembly:
- If you didn’t purchase boneless thighs, remove the skin from the chicken and discard the bones.
- For chicken breast, simply remove the skin.
- Cut the chicken first into strips and then into medium cubes of about 2 cm.
- Transfer to a bowl and add the lemon juice, garlic powder, onion powder, salt and pepper and mix well so that all the chicken is seasoned.
- Remove the wooden skewers from the water, but do not dry them.
- Distribute the chicken cubes on the skewers, about 5-6 cubes on each and arrange them on an auxiliary plate.
- Leave to marinate for about 15 minutes in the refrigerator.
- Meanwhile, preheat the oven to 200°C.
Breaded Chicken Skewer Without Wheat and Without Frying – Breading and Cooking:
- Grease the baking tray(s), preferably non-stick, with oil.
- Set aside 3 deep bowls or plates.
- In the first add the white cassava flour.
- In the second, beat the egg/s with a little water (optional) and season with salt.
- And in the third place cassava flour (biju) mixed with paprika.
- Dip the skewers first in the white cassava flour and then in the beaten egg(s) and drain the excess.
- Finally, pass them in cassava flour (biju) mixed with paprika and press well, so that they are completely evenly breaded.
- Arrange the skewers on the greased baking tray(s) and drizzle a drizzle of oil on each one in a zigzag pattern.
- Place in a preheated oven at 200°C and cook for about 40 minutes, turning them halfway through cooking or until they are cooked and golden.
- Once you reach the desired doneness, remove them from the oven.
FINALIZATION AND ASSEMBLY:
- Arrange the breaded chicken skewers without wheat and without frying on a serving plate or, if you prefer, distribute it directly onto the plates.
- Serve with salad or other side dish of your choice.
