And, perhaps, the easiest way to cook eggs is to boil them (and the most dangerous way is to microwave them straight from their shells). What if we told you that an oven works just as well as a hob? However, let’s start at the beginning.
Can you hard boil eggs in the oven?
The answer is unequivocal: yes. They won’t cook, but the oven will do the same job as water: cook the eggs without damaging the shell. Essentially, there’s not much difference in exactly how you heat eggs – by surrounding them with hot air or boiling liquid.
Does an oven have any advantages?
Again, yes: Cooking your eggs reduces the risk of a green ring appearing around the yolk, which occurs when aggressive boiling or overcooking causes the sulfur from the white to combine with the iron from the yolk to form iron sulphide. In other words, if you are very busy and don’t pay attention to the timer signal, the oven will be a great alternative.

It has two other advantages: you can cook a large number of eggs at the same time. In addition, they will not collide, as happens in water, and therefore will not crack. And finally, many housewives claim that baked eggs are easier to clean, which is very important if, for example, you need to prepare salads and snacks on an industrial scale.
Do baked eggs taste different from hard boiled eggs?
With a certain degree of convention, we can say yes: cooking gives the protein a more uniform and delicate texture. (This is precisely why the protein separates so easily from the membrane that connects it to the shell.)
How to cook eggs in the oven?
It is very easy to do.
- Place eggs in a baking dish on a rimmed baking sheet or rack.
- Preheat oven to 180 degrees.
- Cook the eggs for 20 minutes, remove them and place them in a bowl of cold water.
- Once the eggs have cooled, peel them as usual.
You don’t have to follow this algorithm exactly: you can try other methods. For example, cook the eggs for 10 minutes, then turn off the oven and let them “cook” – some chefs claim this will make them less dry. Experimenting with different models will help you find the one that suits you best.
