Tripe with white beans – a very popular recipe from Brazilian cuisine, practical to serve during a family lunch.

Recipe for 2 people.

Ingredients White beans

– 1 cup(s) of white beans

– 3 cups of water

– 2 bay leaves

Tripe ingredients:

– 400 g of tripe (beef tripe)

– 80 g of smoked Calabrian sausage cut into pieces (or smoked Portuguese sausage)

– 80 g of bacon pieces

– 1 unit(s) of lemon

– 1 unit of onion, chopped

– 3 cloves of garlic, chopped

– 2 bay leaves

– 1 unit of finger-de-moça pepper, seedless, chopped

– 1 tablespoon(s) of tomato paste ab

– 1/4 teaspoon cumin (optional) THE

– olive oil to taste (or oil)

– Salt to taste

– pepper to taste THE

Finishing ingredients

– chopped parsley to taste

PREPARATION:

  1. Choose white beans, removing all impurities. Place it in a colander and wash it under running water. Transfer to a bowl and cover with water. Leave to soak for at least 6 hours.
  2. Once the soaking time has passed, cook the white beans (see preparation).
  3. Set aside the other ingredients and utensils for the recipe.
  4. Wash and peel the onion and garlic and chop them.
  5. Wash the pepper, remove the seeds and chop it.
  6. Cut the sausage and bacon into large pieces, weighing about 40 g each.

PREPARATION:

White Beans – Cooking (do this step during pre-prep):

  1. Drain the beans and discard the water in which they were soaked.
  2. Place in a pressure cooker, add the water (see quantities in the ingredients) and the bay leaf.
  3. Cover the pan and place it over high heat.
  4. When the pan beeps, lower the heat to medium and cook for about 20 minutes or until the beans are soft, but the kernels are whole.
  5. Then clean and blanch the tripe.

Dobradinha – Clean and blanch (do this step during pre-preparation):

  1. Wash the lemon and cut it in half.
  2. Clean the tripe well, removing all the fat.
  3. Rub it with the lemon and a little salt, squeezing it to eliminate the juice: this step serves to reduce the strong smell of the tripe.
  4. Wash under running water.
  5. Place the tripe in a pan, cover it with cold water and, without covering, heat it over high heat until it boils.
  6. Turn off the heat, remove the water and leave to cool.
  7. Continue pre-preparation (step 3).

White bean:

  1. When the white beans are cooked, remove the bay leaves and transfer them with the cooking water to a bowl.
  2. Reserve.

Tripe – Cooking:

  1. Put a kettle on the stove with water to boil.
  2. Arrange the tripe on a cutting board and cut it into medium-sized strips.
  3. Reheat the pressure cooker over medium/high heat and drizzle with olive oil.
  4. Add the chopped onion and a little salt and sauté, stirring occasionally, until it starts to change colour.
  5. Add the chilli, garlic and bay leaf and continue to fry for another 2 minutes.
  6. Add the tripe, sausage and bacon and sauté until the onion is golden.
  7. Season with salt, pepper, cumin (optional) and tomato paste and mix well.
  8. Add boiling water, 2 fingers above..
  9. Cover the pan, raise the heat to high and when it starts to whistle, lower the heat to medium and cook for about 15-20 minutes.

Parsley:

  1. While the meat cooks, wash and dry the parsley.
  2. Chop and reserve on absorbent paper.

Dobradinha with white beans:

  1. Once the cooking time has arrived, turn off the heat, remove the pressure and open the pan.
  2. Remove the sausage and bacon and check the cooking of the tripe.
  3. Cover the pan again – add more boiling water if necessary – bring back to medium heat and cook for another 15 minutes, after reaching pressure again, or until the tripe is tender.
  4. On a cutting board, cut the sausage into thin slices and the bacon into medium cubes.
  5. Once the cooking time has elapsed (second phase), remove the pressure and open the pan. Check the cooking of the tripe: it must be soft.
  6. Add the sausage slices, the bacon cubes and the white beans with a little cooking water and mix.
  7. Check the seasonings (salt, pepper and cumin).
  8. Continue cooking for a few more minutes to blend the flavors.
  9. Remove the bay leaves, add the chopped parsley, mix and turn off the heat.

FINALIZATION AND ASSEMBLY:

  1. Serve tripe with white beans on a serving plate or, if you prefer, distribute among the plates.
  2. The tripe can be accompanied with white rice and/or farofa.
