Lemon sponge cake recipe

Ingredients:
- 6 eggs
- 1 1/2 cups (tea) sugar
- 1 cup (tea) wheat flour
- 1 tablespoon lemon zest
- Margarine for greasing
- Lemon zest for sprinkling

- 3 tablespoons of lemon juice
Preparation method:
- Line a medium rectangular baking tray with greased baking paper.
- Beat the eggs in a mixer for 8 minutes or until they double in volume.
- Add the sifted sugar and flour, the lemon zest and mix delicately with a spoon.
- Pour into the pan and bake in a medium preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
- Leave to cool and unmold.
- For the topping, slowly mix the icing sugar with the juice until you get the consistency of a porridge (add more juice if necessary).
