Paulista couscous

ingredients

  • 1 onion chopped
  • 1/3 cup olive oil
  • 1/2 chopped red chilli
  • 1 can of drained peas
  • 1/2 cup chopped green olives
  • 340 ml of tomato sauce
  • 2 cans of sardines drained
  • 1/4 cup crushed green chili tea
  • 2 cups hot vegetable broth
  • 3 cups flaked cornmeal
  • Salt and pepper to taste

To decorate

  • 3 hard-boiled eggs cut into slices
  • 2 tomatoes cut into slices
  • 1/2 red pepper cut into strips

Preparation method

Heat the oil in a pan and fry the onion until soft. Then add the pepper, peas and olives and sauté for 1 minute. Add the tomato sauce, half the sardines, the green pepper and the vegetable broth and, when it boils, add the cornstarch all at once, stirring constantly. Season with salt, pepper and cook, stirring constantly, for 5 minutes.

Assembly

Grease a mold with holes in the center with olive oil, distribute the egg slices, the tomato slices, the remaining sardines and the pepper strips. Pour the couscous mixture and level the surface. Wait 10 minutes. Then unmold and serve.

  • 1/2 cup flaked cornmeal
  • 1/2 cup water
  • Butter and salt to taste
  • 200g cream cheese
  • 1 sliced ​​chilli pepper

Preparation method

In a bowl, mix the corn flour and salt. Add water and mix. Let it hydrate. Fill the bottom of the baking dish with water, grease the top with butter and add half the dough. Add the ricotta and peppers. Cover with the rest of the dough and cook over medium heat for 15 minutes with the couscous pan covered. Then add a little butter and turn off the heat. ingredients

  • 500 g granulated tapioca
  • 2 cups of tea sugar
  • 1.5 l of milk at room temperature
  • 200ml coconut milk
  • Condensed milk and freshly grated coconut to taste

Preparation method

In a bowl, mix the tapioca and sugar well. Pour in the milk and coconut milk, mix and leave to hydrate for about 5 minutes. Then mix again and wait another 5 minutes. Repeat this process until the dough becomes thicker. Cover with cling film and refrigerate for about 4 hours. Serve with a drizzle of condensed milk and a sprinkling of grated coconut.

ingredients

  • 2 cups flaked cornmeal
  • 1 cup of water
  • 1 teaspoon of salt
  • Butter to serve

Preparation method

In a bowl, mix the Flour corn with salt. Then add the water little by little and mix with your hands. The sweet spot is when the flour stops breaking down. Then we cover with a cloth and let it rest for 20 minutes. After that, mix again, so that it becomes very loose.
