Recipe for chicken fillet with 4 cheese sauce

Ingredients:
- 4 chicken breast fillets (about 800 g)
- 2 tablespoons butter
- Fresh basil leaves for sprinkling
Sauce
- 2 tablespoons butter
- 1 tablespoon wheat flour
- 1 cup milk (tea)
- 1/2 cup grated mozzarella
- 1/3 cup grated cheese
- 4 tablespoons cream cheese
- 2 tablespoons grated parmesan
- Salt, black pepper and grated nutmeg to taste
Preparation method
- For the sauce, melt the butter in a pan and sprinkle with the wheat flour.
- Fry for 2 minutes, stirring.
- Pour in the milk, little at a time, stirring until it thickens.
- Add the mozzarella, cheese and ricotta, stirring until melted.
- Remove from the heat and stir in the parmesan.
- Season with salt, pepper and nutmeg and set aside.
- For the chicken, season the proteins with salt and pepper.
- Heat a pan with butter and brown the fillets for 3 minutes on each side, or until lightly browned.
- Transfer to a serving plate, pour the sauce over, sprinkle with basil and serve.
