A very crunchy, baked, grated cassava cake with just 3 ingredients and salt.

Ingredients CRISPY CASSAVA WITH COALHO CHEESE

– 325 g of peeled and grated cassava/cassava/cassava

– 75 g of grated Coalho cheese

– 3 tablespoons of olive oil + a little to grease the baking dish(s).

– Salt to taste

Ingredients TO ACCOMPANY

– grinding honey (sugar cane molasses) to taste (optional)

– another of your choice (optional)

PREPARATION:

  1. The yield of this recipe is 3 units per serving (each dumpling = 2 tablespoons of dough)
  2. Preheat the oven to 200°C.
  3. Separate the recipe ingredients and utensils.
  4. Wash and peel the cassava (if you didn’t buy it peeled) and grate the coarse part.
  5. Grate the ricotta on the coarse side.
  6. Grease the baking tray(s) with a little olive oil.

PREPARATION:

Crispy cassava with ricotta:

  1. Place the grated cassava in a clean cloth and squeeze out the excess water.
  2. Transfer it to a bowl and season it with olive oil.
  3. Add the grated cheese, salt and mix to coat well.
  4. On the greased baking trays, make small mounds of dough, about 2 tablespoons per biscuit, and flatten them slightly so that they are shaped like a disc.
  5. Leave a distance between the discs so that they do not stick together during cooking.
  6. Place in a preheated oven at 200°C and cook for about 15-20 minutes or until they start to brown.
  7. Turn the gnocchi and cook for another 10 minutes or until golden on both sides.
  8. Turn off the oven and remove the tray(s).

FINALIZATION AND ASSEMBLY:

  1. Serve and crispy cassava with coalho cheese hot as an accompaniment to your main course.
  2. They can also be served as a snack accompanied by sugar cane molasses.
