Gluten-free chicken soup: pasta has given way to quinoa, which is healthier and more nutritious
A very tasty and healthy chicken (fit) soup, with vegetables and quinoa, without pasta.
Recipe for 2 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
CANJA Ingredients:
– 200 g of boneless chicken breast
– 750 ml of water + a little if necessary
– 1/2 unit chopped onion(s)
– 1/2 carrot(s), peeled and cut into half moons
– 1 celery stalk(s) of approximately 7 cm
– 1 unit(s) of laurel
– 1 seedless tomato, cut into cubes
– olive oil to taste (drizzle)
– Salt to taste
QUINOA ingredients:
– 75 g quinoa (about 1/2 cup per 2 servings)
THE
Ingredients TO FINISH
– parsley to taste, chopped
Ingredients TO DECORATE (OPTIONAL)
– radicchio to taste – see pre-preparation (or red cabbage)
PREPARATION:
- Wash the boneless chicken breast, dry it with absorbent paper, season with salt and pepper and let the seasonings absorb during preparation.
- Using a strainer, wash the quinoa under running water. Transfer to a bowl, cover with water and leave to soak until ready to use.
- Set aside the other ingredients and utensils for the recipe.
- Put a kettle of water on to boil.
- Peel the onion and chop it.
- Wash the tomato, cut it in half and remove the seeds, then cut it into cubes.
- Wash and peel the carrot, first cut it in half lengthwise and then cut the halves into half moons.
- Wash the celery stalk and leave it whole.
- Finally, wash and dry the parsley, chop it coarsely and set it aside on absorbent paper.
- Optional – Wash radicchio or red cabbage for decoration. Cut into strips. Leave to soak, in a bowl, in a sodium hypochlorite solution.
PREPARATION:
Chicken soup:
- Heat a pan, drizzle with olive oil and quickly brown the chicken breast without browning it.
- Add the chopped onion, the half-moon carrot, the celery and the bay leaf.
- Season with salt, mix and add boiling water.
- Cook over medium heat for about 20 minutes, until the chicken is cooked.
- Turn off the fire.
- Using a slotted spoon, remove the chicken from the pan, place it on an auxiliary plate and, using 2 forks, chop it coarsely.
- Discard the celery and bay leaves.
- Using the strainer, drain the quinoa again and rinse it under running water.
Chicken Soup with Quinoa Fit:
- Return soup to high heat.
- When it boils, add the drained quinoa, the chopped chicken and the diced tomatoes.
- If necessary, add more boiling water.
- Check the salt and adjust if necessary.
- Cook for another 15 minutes or until the quinoa is well cooked.
- Turn off the heat, add the chopped parsley and mix.
Radicchio or Red Cabbage (finish):
- If you have chosen to use radicchio or red cabbage, remove it from the hypochlorite solution, wash it under running water, drain it well and dry it with absorbent paper.
FINALIZATION AND ASSEMBLY:
- Download the chicken soup with quinoa fit for a tureen, or, if you prefer, distribute it in soup plates.
- Garnish with radicchio or red cabbage (optional).
