Wheat-free chocolate cake, soft and fluffy: find out how to prepare it without using gluten-containing flour
A buttery dough to make a simple wheat-free and lactose-free chocolate cake.

Ingredients Basic dough for gluten-free and lactose-free cakes:
– 100 g of lactose-free butter + a little to grease the pan.
– 1 cup(s) of sugar
– 2 units of eggs, separated whites and yolks.
– 1/2 cup(s) whole lactose-free milk (or other milk of your choice)
– 1 3/4 cup(s) premium gluten-free blend
– salt to taste (pinch)
– 1/2 tablespoon(s) of chemical yeast B
Lactose-free chocolate cake ingredients:
– 1/2 cup(s) cocoa powder (added to the base mixture) + a little to sprinkle the mold.

– 1/2 unit of lemon – juice – added to lactose-free or vegetable milk.
PREPARATION:
- A complete recipe for simple wheat-free chocolate cake equals 4 portions – use a 23cm round baking pan (with or without a hole in the centre) or another of your choice.
- Remove the lactose-free butter from the refrigerator 1 hour before to bring it to room temperature (ointment point).
- Preheat the oven to 180°C.
- Separate the ingredients and utensils for the recipe.
- Grease the molds with lactose-free butter and dust with cocoa.
- Open the eggs and separate the yolks and whites into two bowls.
- Sift the gluten-free flour together with the cocoa powder.
- Wash and dry the lemon and squeeze the juice.
- Measure the dairy-free or non-dairy milk into a cup and add the lemon juice.
PREPARATION:
Simple wheat-free chocolate cake:
- In a mixer, preferably with a paddle, beat the lactose-free butter with the sugar until you obtain a whitish cream.
- Add the egg yolks, one at a time, and continue beating to combine.
- Using a wire whisk, add the gluten-free flour, cocoa and lactose-free or vegetable milk mixed with the lemon juice to the buttercream, alternating until well incorporated.
- In another bowl, beat the egg whites with a pinch of salt until a frothy mixture forms.
- Add the yeast to the dough and then add the egg whites, taking care so that they do not fall apart and thus obtaining a well-aerated dough.
- Transfer the cake mixture to the already greased and dusted baking tray.
- Place in the preheated oven at 180°C and cook for about 45 minutes.
- After this time, test with a toothpick, insert it into the center of the cake and if it comes out clean, it is ready.
- Remove from the oven, shake the pan slightly to see if the cake loosens.
- Unmold when cold.
FINALIZATION AND ASSEMBLY:
- Transfer the cake to a platter or serving plate.
- OR simple wheat-free chocolate cake can be stored at room temperature.
- Serve sliced.
