Cream biscuit, the delicious way to use milk cream.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients CREAM BISCUITS

– 125 g of cream (45% fat)

– 125 g of unsalted butter, cold + a little for greasing the pans

– 2 whole medium eggs

– 1 unit of egg, only the yolk(s).

– 6 tablespoons of sugar

– 1/2 teaspoon(s) of salt

– 250 g of wheat flour, sifted.

– 1/2 tablespoon(s) of chemical yeast

Ingredients TO FINISH

– crystalline sugar to taste

PREPARATION:

  1. Separate the utensils and ingredients for the recipe.
  2. The yield of this recipe for 2 people is approximately 750 g of biscuits and you will need 2 shallow baking trays.
  3. Grease the baking tray(s) with butter
  4. Sift the flour into a bowl.
  5. Preheat the oven to 180°C.
  6. If you prefer, this recipe can also be prepared with the food processor. If you choose to use a food processor, we recommend finally adding the flour and yeast to a bowl and mixing as most appliances can’t handle this.

PREPARATION:

Cream biscuit:

  1. In a bowl, place the cream, butter, sugar and salt.
  2. Add the whole eggs and the yolk and mix well.
  3. Then add the flour little by little, as depending on the moisture of the cream and the size of the eggs, you may need to add less or even a little more.
  4. Mix well to incorporate all the ingredients, but don’t knead the dough, just mix – the point of the dough is when you can form a ball, which can be easily rolled, like gnocchi.
  5. Place the dough on a floured surface, cut into long, thin rolls and cut into pieces of approximately 1 cm with a sharp knife.
  6. Lightly moisten the biscuits with a little water and dip them in crystalline sugar until the entire surface is covered.
  7. Place the biscuits on the greased baking trays, leaving space between them – do not place them on baking paper or a silicone mat, as the butter will help to caramelise the biscuit underneath and create a delicious ‘cone’ which will make it very crunchy.
  8. Place in a preheated oven at 180°C and cook for 30 minutes or until they are golden, they tend to caramelize underneath, but they must be caramel coloured, they cannot darken.
  9. Turn off the oven and remove the tray(s).
  10. Leave to cool on a rack.

FINALIZATION AND ASSEMBLY:

  1. Serve the biscuits with afternoon tea or a cup of coffee.
  2. If you plan to use them another time, store them in airtight containers.
