Closed pepper soup

- 240 ml of oil
- 2 eggs
- 50 g of organic yeast
- 1 1/2 tbsp you of salt
- 1 teaspoon of sugar
- 250 ml of hot milk
- 250ml of water
- 1 kg of wheat flour
- Egg yolk for brushing
- Greasing oil
Filling
- 1 peeled bell pepper, chopped
- 1 onion peeled and chopped
Preparation method

Place the yeast and sugar in a container and mix until you obtain a liquid. Add the oil, milk, water, salt and eggs and mix well. Gradually add the wheat flour and mix until it stops sticking to your hands. Knead the dough for 10 minutes. Then transfer the dough into a container with a drizzle of oil and let it rest for 1 hour.
Assembly
In a container, place the peppers and onion and mix well. Then, with the help of a spoon, take some dough, form a ball and roll it out with a rolling pin. Place the filling in the center and close the dough forming a triangle. Press the edges well so that the filling does not come out. Repeat the operation with the entire dough and brush with the egg yolk. Place the esfihas on an oiled baking tray and place them in a preheated oven at 180°C until golden. Serve immediately.
Meat stew

- 1 kg of wheat flour
- 30 g of organic dry yeast
- 3/4 cup refined sugar
- 125 ml of oil
- 700 ml of warm water
- 1 tablespoon of salt
- Corn flour for dusting
- Wheat flour for dusting
Filling
- 700 g of meat Earth
- 5 tomatoes, seeded and cut
- 1 onion peeled and chopped
- 1/2 cup chopped mint leaves
- Juice of 2 lemons
- Salt and ground black pepper to taste
Preparation method

Place 500 ml of water, yeast and sugar in a container and mix well. Cover with cling film and let rest for 10 minutes. Then add half the wheat flour, oil, salt and mix to combine. Then, flour a smooth surface with wheat flour, place the dough on top and knead well. Add the rest of the wheat flour alternating with the rest of the water until the dough no longer sticks to your hands. Set aside for 10 minutes.
Then divide the dough into two equal parts. Using a spoon, scoop some out. pasta and form into balls, using the corn flour to give shape. With your fingers, flatten each ball, forming high edges (like a nest). Place the discs on a baking tray sprinkled with corn flour and let them rest for 15 minutes.
Filling
Place all the ingredients (meat, tomato, onion, mint leaves, juice of 2 lemons, salt and black pepper) in a container and mix well. Then, with the help of a spoon, take a little filling and distribute it on each esfiha disc. Bake in a preheated oven at 180°C until golden. Serve immediately.

Cheese esfiha

- 1 teaspoon of sugar
- 1/2 cup oil
- 1 cup warm milk
- 15 g of organic yeast
- 4 cups wheat flour
- 2 teaspoons of salt
Filling
- 200 g of grated mozzarella
- 1 1/2 cups chopped parsley
Preparation method
Place the yeast and sugar in a container and mix until you obtain a liquid consistency. Add the milk and salt and stir to combine. Add the oil and wheat flour and knead until you obtain a smooth dough that does not stick to your hands. Cover with cling film and leave to rest for 1 hour.
Then, with the help of a spoon, take some dough and form a ball. Using your fingers, flatten the ball, creating high sides (like a nest). Place the disc on an oiled baking tray and repeat the operation with the entire dough. Let it rest for 15 minutes.
In the meantime, place the cheese and parsley in a container and mix. Then, with the help of a spoon, put a little filling on each sfiha disc, spreading it well. Bake in a preheated oven at 180°C until golden. Serve immediately.
