Panettone ice cream: the best tropical Christmas dessert

Panettone ice cream recipe

Preparation time: 1h (+6h in the fridge)

Performance: 8 servings

Difficulty level: average

Ingredients:

  • 1 can of condensed milk
  • 1 pack of cream (200 g)
  • 1 cup melted white chocolate
  • 1 sachet of unflavored gelatin powder
  • 1 cup candied fruit
  • 1 teaspoon of panettone essence

Chocolate cream

  • 2 cups melted semi-sweet chocolate
  • 1 pack of cream (200 g)
  • 1/2 cup chopped canned cherries

Roof

  • 2 cups melted fractionated milk chocolate

Syrup

  • 2 tablespoons butter
  • 2 tablespoons of chocolate powder
  • Cherries in syrup to decorate

Preparation method:

  1. In a blender, beat the condensed milk, cream, melted white chocolate and prepared gelatin according to package instructions for 1 minute.
  2. Add the candied fruit, the essence and mix with a spoon.
  3. Transfer to a bowl and refrigerate for 30 minutes or until slightly firm.
  4. For the chocolate cream, mix the ingredients and refrigerate for 30 minutes or until slightly firm.
  5. Remove the creams from the refrigerator.
  6. Line a medium English cake pan with aluminum foil and make a layer with half the white cream, one with the chocolate cream and one with the rest of the white cream.
  7. Cover and refrigerate for 4 hours.
  8. Remove and carefully turn out onto a baking tray.
  9. Remove the aluminum foil, spread the chopped chocolate coating all over the cake and place back in the refrigerator for another 1 hour.
  10. For the syrup, heat all the ingredients over low heat, stirring until they melt and form a syrup.
  11. Remove the dessert from the fridge and serve your panettone ice cream decorated with the syrup and cherries in syrup.
