EQUIPMENT

METERS

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

STRAWBERRY MOUSSE Ingredients:

– 12 g of colorless and tasteless gelatine powder (1 sachet = 12 g), hydrates

– 6 tablespoons of water (to hydrate the gelatin)

– 500 g of coarsely chopped strawberries

– 1 tablespoon(s) of lemon (juice)

– 1 can(s) of condensed milk

– 1 can(s) of whey-free cream

Ingredients TO DECORATE AND FINISH (OPTIONAL)

– strawberries to taste, washed with the stem (optional)

– lemon to taste (zest) (optional)

PREPARATION:

  1. Place the jar of cream in the freezer so that the whey separates (about 30 minutes before starting the recipe): it must be very cold, but be careful not to let it freeze.
  2. Separate the ingredients and utensils for the recipe.
  3. For 1 entire recipe, consider 4 servings.
  4. Remove the stems from the strawberries for the mousse, place them in a colander, wash them under running water, drain them and chop them coarsely.
  5. Wash and dry the lemon, cut it in half and squeeze the juice.
  6. Hydrate the gelatine with the amount of water suggested in the ingredients, otherwise follow the instructions on the package.

PREPARATION:

Strawberry mousse:

  1. Remove the jar of cream from the freezer, turn it upside down and make 2 holes in the bottom of the jar to let it drain until the whey has completely come out.
  2. In a blender, add the chopped strawberries and lemon juice and blend until smooth.
  3. Add the condensed milk, the cream and beat again for about 2 minutes, until you obtain a creamy and homogeneous mixture.
  4. Without stopping whisking, add the dissolved gelatine.
  5. Transfer the mousse to a plate or distribute it into individual bowls and place in the refrigerator for at least 4 hours.

FINALIZATION AND ASSEMBLY:

  1. When serving, wash the strawberries in the decoration, if you prefer, without removing the stem, and cut them to your liking (optional).
  2. Wash and dry the lemon and remove the zest (optional).
  3. Remove the Strawberry mousse from the refrigerator.
  4. Decorate with strawberries and garnish with lemon zest (optional).
