Ingredients HOMEMADE PINEAPPLE ICE CREAM WITH MINT

– 5 cup(s) very ripe pineapple, diced

– mint to taste (leaves) + a little for decoration

– xylitol to taste (optional)

– 5 tablespoons of coconut milk + a little if necessary

PREPARATION:

  1. The riper the pineapple, the sweeter the ice cream will be.
  2. Peel the pineapple, cut it into slices and cubes. Measure the amount that will be used in the recipe, place it in plastic and place in the freezer until frozen, at least 4 hours.
  3. Open and place the coconut milk in a bowl or pot in the refrigerator – for at least 4 hours.
  4. In the meantime, wash the mint and chop the leaves, dry them well (keep in the refrigerator and close if necessary).

PREPARATION:

Homemade mint and pineapple ice cream:

  1. After the minimum freezing time has passed, place the pineapple cubes in a processor with the pulse function to crush the pieces – be careful not to force the processor motor, beat slowly.
  2. When the pieces are well chopped, add the sanitized and dried mint leaves (keep some aside for decoration) together with the xylitol (optional).
  3. To mix everything, add the cold coconut milk little by little (give priority to the solid and fattier part).
  4. Beat and check the consistency: the ice cream should be creamy and homogeneous. If necessary, add more coconut milk (according to the quantity in the ingredient list).
  5. Beat until you obtain a very creamy but still firm mixture.
  6. Place in the freezer for at least 1 hour.
  7. If it stays in the freezer for longer, we recommend removing it from the freezer just before serving.

FINALIZATION AND ASSEMBLY:

  1. Form balls and distribute the homemade pineapple and mint ice cream into cups.
  2. Decorate with mint leaves (optional).
