Ingredients: TOASTED MANDIOQUINHA CHIPS
– 2 units of cassava, large, cut into thin slices
– 1 teaspoon paprika (optional) B
– Salt to taste
– pepper to taste B
– olive oil to taste (or oil)
PREPARATION:
1. Preheat the oven to 220°C.
2. Separate all the ingredients and utensils for the recipe.
3. Wash, dry and cut the cassava (it is not necessary to remove the skin), preferably with a mandolin, into thin slices of no more than 0.3 cm. If desired, slices can be cut diagonally, resulting in larger pieces that are less likely to brown.
4. Spread the slices on paper towels, cover with more paper towels and press to remove moisture.
PREPARATION:
Cassava chips:
1. Arrange the slices in the center of the baking dish, add the paprika (optional), salt, pepper and drizzle with a drizzle of olive oil.
2. Toss to coat all the slices and season them evenly.
3. Arrange the cassava slices, without overlapping them, in one or more shallow baking trays greased with olive oil.
4. Cook for 10 minutes in a preheated oven at 220°C.
5. After this time, remove the pan from the oven and turn the slices.
6. Return to the oven and let rest for another 10 minutes or so, or until golden and crisp. Be careful not to toast, oven time may vary.
7. After 20 minutes, check if the mandioquinhas are crispy and golden. If necessary, leave it in the oven for a few more minutes.
8. Remove from the oven and adjust salt if necessary. Mix to distribute it well.
9. Remove from the pan and leave to cool on a wire rack or absorbent paper.
FINALIZATION AND ASSEMBLY:
1. Arrange the cassava chips on a serving plate, or if you prefer, divide them into individual bowls, to accompany your main course.
2. They can also be served directly on plates.
