Christmas recipes: 5 unmissable proposals for dinner

Christmas is a magical time. Represented by festive music, gifts and bright decorations, this date is also noteworthy for another point: the Christmas dinneran opportunity to bring friends and family together to share the best things in life, namely delicious food.

To make this year’s Christmas even more special, the Cooking Guide has selected five very tasty recipes that cannot be missed for dinner. Do it at home and surprise everyone!

Christmas turkey




Time: 3 hours (+12 hours of rest)

Performance: 8 servings

Difficulty: average

Ingredients:

  • 1 turkey with offal (approximately 3kg)
  • 1 onion chopped
  • 6 cloves of garlic
  • 2 bay leaves
  • 2 chicken bouillon cubes
  • Salt and black pepper to taste
  • 1 cup (tea) water
  • 1 cup (tea) olive oil
  • 1 can of beer (350ml)
  • 2 tablespoons margarine

Farofa

  • 1/2 cup (tea) olive oil
  • 1 onion sliced
  • 1 grated carrot
  • 1 cup pitted black plums
  • 1 cup chopped walnuts
  • 1 cup seedless white raisins
  • 1 1/2 cups (tea) raw, coarse cassava flour
  • 1 cup and 1/2 cup (tea) cornmeal
  • Salt and chopped green chilli to taste

Preparation method:

  1. Wash the turkey under running water, set it aside and remove the bag with the offal inside.
  2. Place the offal in a pan, cover with water and cook over medium heat for 15 minutes or until cooked through.
  3. Drain, cut into pieces and set aside.
  4. Blend all dressing ingredients in a blender for 3 minutes.
  5. In a large bowl with a lid, place the turkey and cover it with the blended seasoning.
  6. Leave to rest for 12 hours in the refrigerator, turning halfway through cooking.
  7. For the farofa, add the olive oil, onion, carrot and cooked offal set aside in a pan and sauté for 5 minutes.
  8. Add the plums, walnuts, raisins, cassava flour and corn flour.
  9. Mix well and turn off, remove from heat and set aside.
  10. Remove turkey from marinade, reserving 1 cup (tea) of broth, stuff with farofa and secure with toothpicks or sew with kitchen twine.
  11. Place the turkey in a large pan, pour over the reserved stock and butter, cover with aluminum foil and place in a preheated medium oven for 2 hours.
  12. Remove the foil and return to the oven for another 20 minutes or until cooked through and golden brown.
  13. Remove from the oven, transfer to a serving plate, remove the toothpicks or string and serve the Christmas turkey.

Time: 30 minutes

Performance: 6 servings

Difficulty: easy

Ingredients:

  • 2/3 cup (tea) olive oil
  • 2 cups diced bacon
  • 1 onion sliced
  • 2 crushed garlic cloves
  • 1 cup chopped pitted black plums
  • 1 cup chopped green olives
  • 1 grated carrot
  • 3 cups coarse cassava flour
  • Salt, black pepper and chopped green chilli to taste
  • 2 tablespoons margarine

Preparation method:

  1. Add the olive oil and bacon to a pan and cook over medium heat until lightly browned.
  2. Add the onion and garlic and fry until golden brown.
  3. Add the plum, olive and carrot and sauté for 1 minute.
  4. Add the cassava flour, chives, salt and pepper to taste and mix well.
  5. Remove from the heat, add the margarine and mix again.
  6. Serve the Christmas farofa hot or cold.

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 1 cup shredded smoked chicken
  • 1 cup boiled and squeezed potatoes
  • 1 can drained green corn
  • 1/2 cup diced celery
  • 1 green apple, cut into cubes
  • 1/3 cup seedless black raisins
  • 1 grated carrot
  • 1/2 cup mayonnaise
  • 5 tablespoons of cream
  • Salt and black pepper to taste
  • Oil for anointing
  • Straw potatoes, sliced ​​carrots, drained cherries and mint leaves to decorate

Preparation method:

  1. In a bowl, mix the chicken, potatoes, corn, celery, apple, raisins, carrots, mayonnaise and cream.
  2. Season with salt and pepper.
  3. Pour into a 24cm diameter mold greased in the centre, pressing down with a spoon.
  4. Cover and refrigerate for 2 hours.
  5. Turn out onto a serving plate, decorate with straw potatoes, carrots, cherries and mint leaves.
  6. Serve for dinner.

Passion fruit pavé with champagne biscuit

Time: 20 minutes (+3 hours in the fridge)

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 2 cups milk (tea)
  • 2 cups sugar (tea)
  • 2 tablespoons cornstarch
  • 3 egg yolks
  • 1 can of condensed milk
  • 2 cans passion fruit juice concentrate (use can of condensed milk to measure)
  • 1 can of cream (300 g)
  • 2 packs of champagne biscuits (300g)
  • Passion fruit pulp to decorate

Preparation method:

  1. In a pan, over medium heat, add half the milk, sugar, cornstarch and egg yolks, stirring until thickened.
  2. Remove from heat and wait for it to cool.
  3. In a bowl, mix the condensed milk with half the passion fruit juice and the cream.
  4. In another bowl, mix the remaining milk and juice and moisten the biscuits. Reserve.
  5. In a medium baking dish, alternate layers of biscuit, white cream, biscuit and passion fruit cream, finishing with the passion fruit cream.
  6. Decorate with the passion fruit pulp and place in the refrigerator for 3 hours.
  7. Remove from the fridge and serve for dinner.

Wine pudding

Time: 1h (+3h in the fridge)

Performance: 4 servings

Difficulty: easy

Ingredients:

  • 1/2 liter of red wine
  • 1/2 liter of water
  • 1 cinnamon stick
  • Peel of 1 lemon
  • 1 cup (tea) sugar
  • 150 g of sago
  • Lemon slices to decorate

Preparation method:

  1. Bring the wine, water, cinnamon, lemon zest and sugar to the boil.
  2. Remove the cinnamon and lemon zest and add the sago, stirring continuously and slowly, leaving to boil for another 15 minutes.
  3. Pour the pudding into a wet 20cm diameter mold and place in the fridge for 3 hours.
  4. Unmold, unmold and decorate with lemon slices.
  5. If you prefer, serve with whipped cream.
