Christmas cake recipe with dried fruit

Ingredients:

  • 1 cup and 1/2 cup (tea) milk
  • 1/2 cup (tea) oil
  • 3 eggs
  • 3 cups (tea) of wheat flour
  • 1 tablespoon of yeast
  • 1/2 cup chopped apricots
  • 1 cup chopped walnuts
  • 1/2 cup seedless black raisins
  • 1 tablespoon of rum
  • 1 tablespoon orange zest
  • Margarine and wheat flour for greasing

Roof

  • 1 cup (tea) powdered sugar
  • 3 tablespoons of water
  • Almonds, green grapes and cherries in syrup to decorate

Preparation method:

  1. In a mixer, add the milk, oil, eggs, sugar and beat until you obtain a homogeneous mixture.
  2. Add the flour, yeast and continue to beat for a few minutes.
  3. Add the apricots, walnuts, raisins, rum, orange zest and mix with a spoon.
  4. Pour into a greased and floured medium round baking pan and bake in a preheated medium oven for 30 minutes or until golden brown.
  5. Remove from the oven, let cool and remove from the mold.
  6. For topping, mix sugar and water until dissolved.
  7. Spread on the cake, decorate with almonds, grapes and cherries and serve.
