Christmas roast chicken recipe
Time: 2h30 (+12h rest)

Ingredients:
- 3 tablespoons of olive oil
- 1 clove of minced garlic
- 1 sprig of chopped rosemary
- 1 sachet of chicken broth powder
- 3 cups of orange juice
- Salt and black pepper to taste
- 1 clean whole chicken (about 2.5 kg)
- 1 cup (tea) softened butter
Farofa
- 1 cup diced bacon
- 4 tablespoons butter
- 1 onion chopped
- 1 grated carrot
- 1 leek stalk, sliced
- 2 1/2 cups (tea) cassava flour
- 1/2 cup chopped walnuts
- Salt and chopped green chilli to taste
Preparation method:
- Stir in the olive oil, garlic, rosemary, broth, juice, salt and pepper.
- Spread the chicken inside and out, cover and refrigerate for 12 hours.
- Place a pan over medium heat and brown the bacon in its own fat.
- Add the butter, the onion and fry for 2 minutes.
- Add the carrot, leek and sauté for 3 minutes.
- Turn off the heat, mix the flour, nuts, salt and green chillies.
- Remove the chicken from the sauce and dry it with absorbent paper.
- Fill with part of the farofa and close with toothpicks.
- Gently spread half the butter between the skin and meat.
- Distribute the rest of the butter all over the chicken, tie the legs with string, place them on a baking tray and cook in a low, preheated oven for 2 hours or until golden brown.
- Remove and serve with the remaining farofa.
