An easy recipe with grated cod.
Recipe for 6 people.

SAUTEED INGREDIENTS FOR ESCONDIDINHO COD:
– 900 g of desalted cod flakes, preferably Porto Bacalhau. (or cod chips)
– 150 g of bacon, diced
– 300 ml of extra virgin olive oil
– 3 units of onions, cut into rings
– 12 cloves of garlic, chopped
– 3 units of dedo-de-moça peppers, seedless, chopped
– 3 bay leaves
– 3 leeks, large, sliced
– 150 ml of dry white wine
– 3 tomatoes, seedless, diced
– pitted black olives to taste (or black olives)
– Salt to taste
– pepper to taste
– parsley to taste, chopped
– green onion to taste, chopped
Ingredients of MASHED POTATOES FOR ESCONDIDINHO COD:
– 12 large potatoes
– Salt to taste
– 90 g of unsalted butter
– 6 tablespoons of olive oil
– 210 ml of milk
Ingredients TO COMPLETE:
– breadcrumbs to taste (optional)
– parmesan to taste, grated
PREPARATION:
1. If preferred, this dish can be served individually.
2. If you purchased the salted cod in flakes, start desalting about 6 hours before starting the preparation. Soak it in a bowl with cold water and change the water every 2 hours, keeping it covered in the refrigerator during this process, changing the water at least 3 times.
3. If using loin, remove the skin and bones from the cod and cut it into large pieces. You can do this after boiling if you prefer.
4. Boil a pan of water and blanch the cod for 5 minutes. Remove and reserve.
5. Separate other ingredients and utensils from the recipe.
6. Grate the parmesan if you didn’t buy it grated.
7. Remove the skin from the bacon and cut it into cubes.
8. Wash and peel the garlic and onion. Cut the onion into slices and mince the garlic.
9. Wash the leek and cut it into slices.
10. Wash, remove the seeds and chop the chilli pepper.
11. Wash the tomato, cut it into quarters, remove the seeds and cut the quarters into cubes.
12. If you have not purchased the pitted ones, remove them and cut the olives into cubes.
13. Wash and dry the parsley and spring onion and chop them. Book on absorbent paper.
14. Preheat the oven to 200o C.
PREPARATION:
MASHED POTATOES FOR ESCONDIDINHO COD:
1. Wash, peel and cut the potatoes into medium cubes.
2. In a pan, cook the potatoes in salted water until they are very soft.
3. Drain them and, while they are still hot, pass them through a citrus juicer or strainer. If you prefer, this step can be done during pre-prep.
4. Return the squeezed potatoes to the pan. Add the butter, olive oil and milk.
5. Bring to the boil and cook until it no longer sticks to the pan. Season with salt.
6. Turn off the heat and set aside.
JUMP FOR THE ESCONDIDINHO COD
1. In a pan, brown the diced bacon until crisp, but without darkening it too much. Discard the fat and reserve the bacon.
2. In the same pan, add half the olive oil and brown the onion, garlic and chilli, without browning.
3. Add the cod cut into pieces and the bay leaves and brown without stirring too much to avoid breaking the chips.
4. Add the garlic and brown it a little more (it must be al dente).
5. Pour in the wine and cook until the alcohol has evaporated.
6. Add the tomato and olives and season with salt and pepper.
7. Turn off the heat and add the reserved bacon, parsley and green onion and drizzle with the remaining olive oil.
8. Grease one or more refractory molds with olive oil, remove the bay leaf(s) and add the cod stew.
CODE HIDE:
1. Place the mashed potatoes over the cod stew, spreading it until all the cod is covered.
2. Mix the breadcrumbs (optional) with the grated parmesan and spread over the puree.
3. Place in a preheated oven at 200ºC, until golden brown.
FINALIZATION AND ASSEMBLY:
1. Remove the cod skin from the oven and then serve in the baking dish(s).
