For many, an ingredient that cannot be missing from Christmas dinner is raisins. This fruit is one of the main flavors of the Christmas period and can be used in different types of recipes, sweet or salty. Bread pudding with raisins
Time: 2h (+2h in the fridge)
Performance: 12 servings
Difficulty: easy
Ingredients:
- 2 cups sugar (tea)
- 5 stale French bread
- 1 liter of milk
- 3 eggs
- 1 can of condensed milk
- 2 tablespoons butter
- 1/2 cup seedless raisins
Preparation method:
- Pour half the sugar into a mold with a hole in the center of 24 cm in diameter and cook over low heat, without stirring, until you obtain a caramel.
- Peel the French bread, grate it and soak it in milk for 10 minutes.
- In a blender, beat the bread with the milk, condensed milk, eggs, remaining sugar and butter.
- Pour into the caramel mold, holding it with a cloth to avoid burning your hands.
- Sprinkle with the raisins and bake in a high, preheated double boiler oven for 1 hour 20 minutes or until an inserted toothpick comes out clean.
- Leave to cool, place in the refrigerator for 2 hours, unmold and serve.
Raisin cake
Time: 1 hour (+35 minutes of rest)

Ingredients:
- 1 cup seedless raisins
- 1/2 cup rum (tea).
- 2 cups (tea) of wheat flour
- 1 tablespoon of yeast
- 4 eggs
- 1 cup (tea) brown sugar
- 1 tablespoon of cinnamon
- Margarine and wheat flour for greasing
- 1/2 cup (tea) oil
Preparation method:
- Leave the raisins to macerate in the rum for 30 minutes.
- In a bowl place the flour, yeast, raisins and mix well.
- In a blender, beat the remaining ingredients and mix them with the ingredients in the bowl.
- Place in a greased and floured 30cm x 22cm baking pan.
- Bake in a preheated medium oven for 30 minutes or until an inserted toothpick comes out clean.
- Remove from the oven, let rest for 5 minutes, unmold and serve with whipped cream to taste.

Gingerbread with raisins
Time: 1 hour
Performance: 20 servings

Ingredients:
- 1 cup (tea) brown sugar
- 200 g of butter at room temperature
- 1 cup honey
- 4 eggs
- 2 1/2 cups (tea) wheat flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon clove powder
- 300 g of raisins
- 1 level tablespoon of baking powder
Roof
- 1 cup (tea) sugar
- 2 tablespoons of milk
- 1 tablespoon butter or margarine
- 2 tablespoons of chocolate powder
- Margarine and wheat flour for greasing
Preparation method:
- In a mixer, beat the sugar, honey, butter and eggs for 5 minutes.
- Add the flour little by little, beating until you obtain a homogeneous mixture.
- Add the spices, raisins and yeast and mix gently with a spoon.
- Pour into a greased and floured 40x28cm baking pan and bake in a preheated medium oven for 50 minutes or until an inserted toothpick comes out clean. Let cool.
- For the topping, mix the sugar, milk, butter and chocolate in a pan and heat over medium heat until boiling.
- Cook for 2 minutes and spread on the still hot cake.
- Let it dry, cut it into squares and serve immediately.

Ingredients:
- 1 cup (tea) sugar
- 1 cup curd (tea)
- 2 eggs
- 1 cup seedless raisins
- 1/4 teaspoon nutmeg
- 1 pinch of salt
- 1 tablespoon lemon juice
- 1/2 simple dough recipe
Simple dough
- 2 cups sifted wheat flour
- 3/4 teaspoon salt
- 2/3 cup (tea) vegetable shortening
- 4 to 6 tablespoons of ice water
- Wheat flour to flour the surface
Preparation method:
- For the dough, in a bowl, sift together the flour and salt, add the vegetable fat and mix well.
- Add the water little by little until the mixture is firm.
- Using a rolling pin, roll out the dough on a floured surface.
- Line a round, fluted cake pan with a diameter of 22 cm with the mixture.
- Using a mixer, beat the eggs, add the sugar and beat until pale.
- Add curd, raisins, nutmeg, salt and lemon juice and mix well.
- Pour the mixture over the dough and bake in a preheated medium oven for 30 minutes or until golden brown.
Christmas Farofa
Time: 20 minutes
Performance: 8 servings

Ingredients:
- 3 tablespoons butter
- 1 cup chopped bacon
- 1 onion chopped
- Salt and chopped green chilli to taste
- 1 stalk of celery chopped
- 1/2 cup black raisins
- 3 cups cassava flour
- 1/2 cup chopped apricots
- 1 cup chopped walnuts
Preparation method:
- Heat a pan over medium heat with the butter and fry the bacon until golden brown.
- Add the onion, celery and sauté for 2 minutes.
- Add the raisins, apricots, flour, walnuts, salt and green chillies and mix.
- Transfer to a plate and serve.
