Cod ingredients
– 1.05 kg desalted cod fillet
– 1.2 L of milk
– 3 bay leaves
Ingredients for the cod filling
– 6 tablespoons of olive oil
– 3 cloves of garlic, chopped
– 6 tablespoons of chopped onion
– 1 1/2 units dedo-de-moça pepper, seeded, chopped
– 300 ml of dry white wine
– 6 Cambuci peppers, without seeds, cut into strips
– 3 tomatoes, seedless, cut into cubes
– Salt to taste
– pepper to taste THE
– 600 ml cod cooking milk – see recipe
– 3/4 cup(s) pitted black olives, roughly chopped
– 6 tablespoons of cream cheese
– 3 tablespoons of chopped parsley
Ingredients Mashed Potatoes and Garlic
– 9 medium potatoes, cut into 1cm slices
– 6 cloves of garlic, peeled and cut in half
– 6 tablespoons of olive oil
– 300 ml cod cooking milk – see recipe
– Salt to taste
– pepper to taste THE
Finishing ingredients:
– olive oil to taste, to grease the refractory(s)
– parmesan to taste, grated
PREPARATION:
1. Separate the ingredients and utensils for the recipe. If you purchased frozen desalted cod, remember to defrost it beforehand. This recipe can be assembled in individual refractories or in just one. Take the opportunity to separate them.
2. Cook the cod (see preparation).
3. Then cook the potatoes (see preparation).
4. Peel and chop the onion and garlic for the cod filling.
5. Wash, remove the seeds and chop the chilli. Wash the tomato, remove the seeds and cut it into cubes. Wash, remove the seeds and cut the Cambuci pepper into strips.
6. Drain the preserved olives and chop them coarsely.
7. Wash, dry and chop the parsley.
8. If you haven’t purchased the cheese already grated, take the opportunity to grate it.
9. Preheat the oven to 220°C. Continue preparing the cod.
PREPARATION:
Cod (do this step before starting pre-preparation):
1. Remove and discard the skin from the cod fillet and cut it into pieces.
2. Place the cod pieces in a pan, cover with milk and add the bay leaf.
3. Bring to the boil and, when it boils, lower the heat and cook for about 15 minutes.
4. Continue cooking the potatoes (below).
Mashed Potatoes and Garlic (do this step before starting the pre-preparation):
1. Peel and cut the potatoes into 1cm slices.
2. Place in a pan, cover with water. Bring to a boil over medium heat.
3. Peel the garlic cloves and cut them in half
4. When the water boils, add salt, add the garlic cloves and cook for about 15 minutes or until the potatoes and garlic are very soft.
5. Continue pre-preparation (step 4).
Cod:
1. After 15 minutes, with a sieve placed over a bowl, drain the cod and reserve the cooking milk for the cod filling and the mashed potatoes.
2. Place the cod on a serving plate to cool slightly so you can handle it.
3. Wash the pan where you cooked the cod to make the filling.
Cod filling:
1. When the cod is hot/cold, remove the bones and open it into large flakes (just separate the flakes, they will fall off).
2. Add the oil to the pan and sauté the garlic and onion over high heat until lightly browned.
3. Add the cod flakes and chilli and sauté for 3 minutes, stirring occasionally.
4. Pour in the wine and continue over high heat until all the alcohol has evaporated.
5. Add the cambuci pepper and tomato and sauté for another 2 minutes.
6. Season with salt and pepper.
7. Add the cod cooking milk (see quantities in the filling ingredients).
8. Once it boils, reduce the heat to medium and cook for about 8 minutes or until the milk has reduced to half its volume.
Mashed Potatoes and Garlic:
1. At the same time as preparing the filling, check whether the potatoes are cooked. If so, drain it.
2. Pass the potatoes and garlic cloves, while still hot, through a sieve or, in a pan, blend with a blender until you obtain a puree.
3. Add the olive oil, put back on the heat (in the same pan) and mix until you obtain a smooth and homogeneous puree.
4. Add the cod cooking milk (see the quantity in the puree ingredients) and cook for a few minutes to combine.
5. Season with salt and add pepper.
6. Turn off the heat and set aside.
Stuffed with cod
1. Check whether the milk has reduced to half its initial volume.
2. Add the olives, mix and cook for another 2 minutes.
3. Add the cream cheese and chopped parsley and mix.
4. Check the salt and pepper.
5. Turn off the heat and set aside.
Escondidinho Cod with Mashed Potatoes and Garlic:
1. Grease a baking tray or individual baking trays with olive oil.
2. Place the cod filling in the refractory pan(s), leveling it so that it has a uniform height.
3. Spread over the puree and smooth again.
4. Sprinkle with grated parmesan.
5. Place in the preheated oven at 220°C and bake for about 15-20 minutes until the cheese is golden brown and golden brown.
ENTRY OR DESSERT:
If you have chosen to prepare an appetizer or dessert, take advantage of the oven time to prepare it.
FINALIZATION AND ASSEMBLY:
1. Remove the hiding place from the oven.
2. Serve in their refractories.
