PASSION FRUIT MOUSSE WITHOUT DAIRY Ingredients:
– 6 units of passion fruit pulp, reserve the seeds for finishing
– 6 cups raw unsalted cashews, soaked for at least 8 hours
– 3 tablespoons of vanilla essence
– 9 tablespoons demerara sugar (or xylitol)
Ingredients Passion fruit syrup
– 1 1/2 units of passion fruit pulp, reserve the seeds for finishing
– 6 tablespoons of water
– 6 tablespoons demerara sugar (or xylitol)
PREPARATION:
1. Soak the chestnuts for at least 8 hours.
2. Freeze the passion fruits, preferably in the freezer to prepare the mousse.
3. Separate all the ingredients and utensils for the recipe.
4. Sprinkle the sugar into the blender so that no pieces remain in the mousse.
PREPARATION:
Dairy-free passion fruit mousse:
1. After draining the water from the chestnut sauce, wash them well and drain them again.
2. Sift the passion fruit pulp (chilled) and reserve the seeds for the syrup.
3. In a food processor or blender, beat the chestnuts, passion fruit pulp, vanilla and sugar until smooth and thick.
4. If it is too difficult to whip, add a little filtered water (it should be very little). Blend well and add any bits that spill onto the sides of the blender or food processor.
5. Beat well until you obtain a smooth and homogeneous cream.
6. Pour into dessert cups and leave to cool, preferably in the freezer if you are in a hurry to serve, while you prepare the syrup.
Passion fruit syrup:
1. Sift the passion fruit pulp and reserve the seeds.
2. Blend the seedless pulp a little in the mixer, just to emulsify it – make it creamy – with the water and sugar.
3. Remove from blender and blend reserved passion fruit seeds in desired amount (optional).
4. Store in the refrigerator until ready to serve.
FINALIZATION AND ASSEMBLY:
1. When ready to serve, remove the glasses from the Dairy-free passion fruit mousse from the freezer.
2. Put the fruit syrup on top.
