Roasted rack of lamb with vegetables

ingredients

  • 1 kg of rack of lamb
  • 1 courgette cut into slices
  • 5 potatoes cut into a crescent shape
  • 10 cherry tomatoes
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • Salt, olive oil and ground black pepper to taste

Preparation method

Place the vinegar and lemon juice in a container and mix well. Place the loin in another container, pour the mixture over it and place in the refrigerator for 12 hours. Then remove from the fridge and season the loin with salt and black pepper. Reserve. Grease a baking tray with olive oil, lay out the vegetables and place the steak on top. Place in the preheated oven at medium temperature for 20 minutes. Turn off the oven and serve immediately.

Tip: Garnish the dish with your favorite aromatic herbs.

Bacalhau with potatoes, eggs and bacon

ingredients

  • 4 stations cod
  • 2kg potatoes, peeled and cut into slices
  • 2 onions peeled and cut into rings
  • 1 leek cut into slices
  • 3 eggs, boiled and cut into cubes
  • 1 red pepper, seeded and diced
  • 50 g of bacon cut into strips
  • Olive, olive oil, parsley, salt and ground black pepper to taste
  • Water for cooking

Preparation method

Wash the cod fillets well and place them in a container with water. Place in the fridge and change the water every 4 hours until the fish is completely desalted. Next, place the cod in a pan with water and place it over medium heat. Leave to boil for 2 minutes, turn off the heat, drain the water, cut the fish into slices, remove the bones and set aside.

Grease the bottom of a baking dish with olive oil and make a layer of onion, pepper and leek. On top, make a layer of potatoes and cod chips. Repeat the process until the ingredients are used up. Season with salt and pepper. Drizzle with olive oil and bake in a preheated oven at medium temperature for 45 minutes. Remove from the oven and add the eggs, bacon and olives to the baking dish. Finally, sprinkle with parsley and serve immediately.

  • 2 kg of chester
  • 250 g of bacon cut into strips
  • 1 glass of dry white wine
  • 6 cloves of garlic, peeled and crushed
  • 2 bay leaves chopped
  • Olive oil and salt to taste

Preparation method

Place the chester in a container and season it with wine, garlic, bay leaves and salt. Cover with cling film and leave to rest for 2 hours. Then grease a baking tray with olive oil, place the chester, cover with oil bacon strips and place in the preheated oven at medium temperature for 2 hours. Turn off the oven and serve immediately.



Lentil

  • 1 1/2 cups lentils
  • 1 piece of Calabrian sausage cut into slices
  • 200 g chicken breast cut into cubes
  • 1/2 cup chopped parsley
  • 3 cloves of garlic, peeled and chopped
  • 1 cup chicken broth
  • 1 lemon juice
  • 1 onion peeled and chopped
  • 2 carrots, peeled and chopped
  • 1 red pepper, seeded and chopped
  • 170g canned peas
  • 2 tablespoons of olive oil
  • Salt to taste
  • Water for cooking

Preparation method

Place the lentils in a container, cover with water and leave to soak for 8 hours. Then drain the water and wash the lentils under running water. Reserve. Place the chicken in a container and season it with salt and lemon juice. Transfer the chicken to a pressure cooker, place it the lentil, 3 cups of water, chicken broth, garlic, onion, pepper, sausage and carrot. Place on medium heat and, as soon as the pressure reaches the level, cook for another 20 minutes. Turn off the heat, wait for the pressure to release and open the pan. Transfer the mixture into a container and add the parsley, peas, oil and salt and mix well. Serve immediately.

Roasted ribs with honey sauce

ingredients

  • 1 pork rib
  • Honey and coarse salt to taste

Preparation method

Place the rib in a container and season it with coarse salt, massaging well. Pour honey over the meat, cover with aluminum foil and place on a baking tray. Then place in the preheated oven at medium temperature for 2 hours. Then carefully open the oven, remove the aluminum foil and leave to rest rib cook for another 30 minutes. Turn off the oven and serve immediately.

Place the potatoes and carrots in a pan and cover with water. Add salt and cook over medium heat until the vegetables are soft. Turn off the heat, drain the water, transfer it to a container and set aside. In another pan, add the olive oil and heat over medium heat. Add the onion and garlic and brown them. Turn off the heat, pour the mixture over the vegetables and mix well. Add the mayonnaise little by little and mix until you obtain a smooth mixture. Then, using a spoon, fill the shells and put them to cool in the refrigerator. Finish by sprinkling with parsley and serve immediately.
