Ingredients DOUGH FOR CAKES AND CAKES WITH 3 INGREDIENTS:

– 100 ml of fresh cream (or natural yogurt)

– 2 cups wheat flour, or enough to loosen it, plus a little more to open it up.

– 80 g of unsalted butter

BANANA FILLING Ingredients:

– 6 bananas, or enough to complete the cake

– 3 tablespoons of sugar

– ground cinnamon to taste

Ingredients OAT CRUMBLE (STREUSEL) – SWEET AND CRISPY FAROFA

– 110 g of cold unsalted butter, plus a little more for greasing.

– 1 cup(s) demerara sugar (or sugar)

– 1 cup(s) of wheat flour

– 1 cup(s) of oat bran

– salt to taste (pinch).

– nutmeg to taste, grated. (optional)

– 2 teaspoons of chemical yeast

– 2 tablespoon(s) vanilla essence (or almond essence)

– 2 units of eggs, just the yolk(s), to finish.

Ingredients TO SERVE (OPTIONAL):

– ice cream of your choice (optional) (or other ice cream of your choice)

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. The recipe for 2 people can be assembled in a 16-inch mold, for 4 people, in a 20-inch mold, 3 cm high. Increase the diameter of the pan based on the number of servings.
  3. Preheat the oven to 180°C.
  4. Sift the flour into a bowl.

PREPARATION:

Baking and pie dough – 3 ingredients:

  1. In the bowl with the sifted flour, add the butter and mix until you obtain crumbs: do not overwork the dough. Add the cream or yoghurt and knead until it sticks to your hands – add a little more flour if necessary.
  2. This process can also be done in the food processor with the pasta paddle. In this case, add the cream or yogurt and the diced butter and beat to incorporate them. Then add the flour little by little and continue whisking. If your food processor isn’t large enough, transfer the dough to a flour-dusted counter and follow the process outside of the food processor.
  3. If you bake the cake next time, the dough does not need to rest in the refrigerator. However, this dough can be stored in the refrigerator for up to 2 days or frozen for future use.
  4. Bottom and edges of the cake – Place the dough on a work surface sprinkled with flour and roll it out, with the help of a rolling pin, into a disc large enough to cover the bottom and sides of the cake pan and thin. Wrap the dough around the rolling pin and unroll it inside the pan.
  5. Lightly press the dough with your fingers against the bottom and sides until firm. Coat the sides with a little more dough and press to secure.
  6. Prick the bottom of the dough several times with a fork so that the dough does not swell during cooking.
  7. Reserve.

Banana filling:

  1. Peel and slice the bananas into thin slices.
  2. In a bowl, mix the cut bananas, sugar and cinnamon.
  3. Set aside and prepare the oat crumble.

Oat crumble, sweet and crunchy FAROFA:

  1. Cut the cold butter into cubes.
  2. In a bowl, place the other STREUSEL ingredients (demerara sugar, flour, oats, chemical yeast, vanilla or almond essence, salt, nutmeg (optional) – except the egg yolks.
  3. Mix well with your hands, breaking up the butter so that it blends into the whole mixture.
  4. Add the egg yolk(s), one at a time, continuing to mix with your fingertips until a moist, crumbly crumble forms.

Banana and cuca cake – Assembly:

  1. Arrange the filling (banana slices with sugar and cinnamon) inside the open dough. Distribute well. The filling must fill ¾ of the height of the dough.
  2. Then cover with the crumble, crumbling it over the entire surface of the cake.
  3. If you have a surplus of crumble, cook it separately on baking paper or on a silicone mat.
  4. Cook (next step).

Banana and cuca cake:

  1. Bake in a preheated oven at 180°C for 50 minutes or until the crumble is golden and crunchy on the surface (rises and puffs) and the dough is well cooked (this time will be shorter if you cook the excess crumble on paper) . butter).
  2. Remove from the oven, turn off the heat and let the cake cool to room temperature.

FINALIZATION AND ASSEMBLY:
