Ingredients: grilled steak
– 800 g of ribeye, divided into portions
– 1 tablespoon of smoked paprika b. C
– 2 teaspoons of garlic powder B
– Salt to taste
– pepper to taste B
– 4 tablespoons of olive oil, to grease the pan or griddle
Lemon sauce ingredients
– 1 unit of tomato, without seeds, cut into cubes
– 1/2 onion(s), diced
– 1/2 unit of yellow pepper, without seeds and white parts, cut into cubes
– 1 unit of finger-de-moça pepper, seedless, chopped
– parsley to taste, chopped
– 6 tablespoons of lemon (juice)
– 6 tablespoons of extra virgin olive oil
– 2 tablespoons of water, filtered
– Salt to taste
Ingredients Banana farofa with bacon
– 200 g of bacon cut into cubes
– 2 cloves of garlic, chopped
– 2 cups of cassava flour
– 2 small bananas, cut into cubes
– green onion to taste, cut into rings
– lemon to taste (zest)
– Salt to taste
PREPARATION:
1. Start by marinating the steak (see preparation).
2. Separate other ingredients and utensils from the recipe.
3. Chop the bacon into cubes.
4. Peel and mince the garlic. Wash, remove the seeds and chop the chilli.
5. For the Limonete, peel and cut the onion into cubes. Wash, remove the seeds and cut the tomato and yellow pepper into cubes.
6. Wash the lemon and peel it into the farofa (leave it on a paper towel) and squeeze the juice into the lemon juice.
7. Wash, dry and chop the spring onion and parsley. Book on absorbent paper.
PREPARATION:
Grilled Steak – Marinade (do this step before starting pre-prep):
1. Cut the steak into portions of approximately 200 g each.
2. Place all the seasonings (smoked paprika, garlic powder, salt and pepper) in a bowl, mix and rub all over the meat.
3. Set aside.
4. Continue pre-preparation.
Lemon sauce:
1. In a bowl place all the chopped ingredients (tomato, onion, yellow pepper), the chopped chilli pepper and the chopped parsley.
2. Season with lemon juice, extra virgin olive oil, water and salt.
3. Mix and store in the refrigerator.
ENTRY OR DESSERT:
If you have chosen to prepare an appetizer or dessert, take the opportunity to prepare it since this recipe does not require an interval.
Banana crumbs:
1. Place the bacon cubes in a pan and heat them. Let fry until crisp, about 5 minutes.
2. Add the chopped garlic and let it brown. It’s very fast, be careful not to burn it.
3. Add the raw cassava flour and mix well for about 3 minutes, so that it turns lightly golden. Add the salt.
4. Turn off the heat. Peel and cut the banana into cubes and mix it carefully with the farofa.
5. Add the green onion and reserved lemon zest and mix.
Grilled steak:
1. Heat the olive oil on a griddle or thick-bottomed pan.
2. When hot, add the steak pieces. Leave to grill for about 5 minutes on each side.
3. The meat must be well sealed, preserving the juice inside. After this time, it will be medium rare. If you prefer the meat rarer, it is advisable to slice it and quickly place it on the hot plate to reach the desired doneness before serving.
4. Let the meat rest for 3 minutes before serving.
FINALIZATION AND ASSEMBLY:
1. Place the steak on a plate or, if you prefer, divide it between plates.
2. Arrange the banana farofa on another plate, or on plates, next to the meat.
3. Drizzle the meat with the lemon sauce and serve the rest separately.
