A traditional Three Kings Day cake full of symbolism.

Recipe for 4 people.

DOUGH FOR THE KINGS CAKE Ingredients:

– 150 g of white raisins

– 150 g of candied fruit

-250 ml of water

– 100 ml of Port wine (or other wine of your choice)

– 3 cups wheat flour, sifted

– 1 1/3 cup(s) sugar, sifted.

– 2 teaspoons of chemical yeast, plus a pinch, sifted.

– 2 teaspoons of baking soda, sifted

– salt to taste, a pinch, sifted.

– 40g unsalted butter, melted, plus a little for greasing

– 4 teaspoons of canola oil

– 60 g of eggs (30 g = approximately 1 small egg)

– 120 g of walnuts, chopped.

DARK ingredients (COVERING):

– 30 ml of whole milk

– 1 1/3 cups (tea) icing sugar + a little to thicken if necessary.

– lemon to taste (juice and zest)

Ingredients TO DECORATE:

– candied fruit to taste (optional)

– dried fruit to taste (optional)

– nuts to taste

– physalis to taste (optional)

– maraschino cherries in syrup to taste, only the cherries. (optional)

PREPARATION:

  1. For one Kings Cake large, like the one in the photo, remember to adjust the preparation quantities for 4 people. Use a 23cm baking tray with a hole in the centre.
  2. Chop the candied fruit that will be used for the preparation.
  3. Bring a kettle of water to the boil (see quantities in the ingredients).
  4. Place boiling water in a bowl. Add the raisins and chopped candied fruit. Cover and let rest for 20 minutes.
  5. Preheat the oven to 180°C.
  6. Separate other ingredients and utensils from the recipe.
  7. Sift all the dry ingredients (flour, sugar, baking powder, baking soda and salt) into a large bowl.
  8. Set aside a few whole walnuts for decoration. Chop the rest by covering it with a clean cloth or place it in a plastic bag and grind it with a rolling pin.
  9. Grease a round pan with a hole in the center with butter (without melting it).
  10. After 20 minutes add the wine to the bowl with the raisins and candied fruit. Let it rest for another 10 minutes.
  11. Wash the physalis decoration.

PREPARATION:

DOUGH FOR THE KING CAKE:

  1. In a bowl, melt the butter in the microwave – it only takes a few seconds. Stir in the oil and add to the wine, raisins and fruit mixture.
  2. Add the butter, oil, wine and fruit mixture to the sifted dry ingredients. Mix.
  3. Beat the eggs well before adding them. Add the egg and chopped nuts.
  4. Mix well with a wire whisk until you obtain a smooth mixture.
  5. Place the dough in the greased pan and bake in a preheated oven at 180°C for 40 minutes or until a toothpick inserted inside comes out clean.

WHITE FONDANT (COVERING):

  1. Heat the milk in a saucepan.
  2. Add the sugar and let it thicken a little.
  3. Wash the lemon(s), peel them and extract the juice.
  4. Add the juice (little at a time, a few drops) and the lemon zest to the milk with the sugar
  5. Remove from heat. The mixture obtained must be thick and drain slowly.
  6. Turn the cake out onto a serving plate and serve.
  7. If the fondant cools, heat it slightly to make it more liquid.
  8. Pour the fondant over the cake, letting it drip.

FINALIZATION AND ASSEMBLY:

  1. Decorate the Kings Cake with dried fruit, candied fruit, maraschino cherries (optional) and physalis (optional).
