1 cutting board(s), 2 bowls, 1 pizza pan (20 to 25 cm in diameter) or individual molds (12.5 cm in diameter), 1 food mill (optional), 1 grater

Basic Ingredients – Fake Pizza

– 1 unit of egg, lightly beaten

– 600 g minced chicken breast (or minced duckling)

– 3 tablespoons of golden flaxseed flour

– 1 teaspoon(s) of garlic powder THE

– 1 teaspoon(s) of dried oregano THE

– Salt to taste

– pepper to taste THE

– olive oil to taste (to grease the pan)

Topping Ingredients – Fake Pizza

– 1 1/2 cups seasoned tomatoes (see recipe)

– 3 cups of grated mozzarella

– 16 cherry tomatoes, cut in half lengthwise

– 8 pitted olives, cut into slices

– 2 tablespoons of grated parmesan

Ingredients Seasoned Tomatoes

– 1 1/2 cups diced peeled tomatoes

– 4 teaspoons of extra virgin olive oil

– 3 tablespoons basil (leaves), chopped

– Salt to taste

– pepper to taste THE

Finishing ingredients

– extra virgin olive oil to taste

– basil to taste (leaves)

PREPARATION:

1. Preheat the oven to 220ºC.

2. Separate the ingredients and utensils for the recipe. Grease the pizza pan(s) with olive oil. The assembly proposal is 1 pizza per person (individual assembly). But it can also be assembled for sharing.

3. Wash and cut the tomatoes. Clean and chop the basil leaves (keep some whole ones aside for finishing).

4. Grate the mozzarella and parmesan, if you didn’t buy it already grated.

PREPARATION:

Base – Fake Pizza:

1. In a bowl, lightly beat the egg, just to mix the yolk and white.

2. In another bowl, mix the minced chicken or duck with the amount of egg indicated in the ingredients.

3. Add the flaxseed flour and mix well.

4. Season with garlic powder, oregano, salt and pepper.

5. Place the chicken and minced meat mixture in the center of the mold or molds previously greased with olive oil. Divide the mock pizza base between the number of portions you are preparing. Open at the sides until it measures approximately 20cm. Level to obtain the same thickness.

6. Place in the oven preheated to 220ºC and cook until the meat is cooked – about 15 minutes. It shouldn’t release liquids but it shouldn’t be dry either.

Seasoned Tomato:

1. Mash the peeled tomato, preferably with a food mill, until you obtain a slightly rustic puree.

2. Add the extra virgin olive oil and chopped basil and mix well.

3. Salt and pepper – be careful with the salt – taste the mozzarella and if it is very salty do not add salt to the tomatoes.

APPETITE OR DESSERT (optional):

If you have chosen to prepare an appetizer or dessert, take the opportunity to prepare it while the base cooks.

Coverage – Fake Pizza:

1. Remove the base from the oven.

2. Spread the seasoned tomato on top, covering the entire surface.

3. Place the grated mozzarella on top.

4. Arrange the tomatoes and olive slices.

5. Sprinkle with parmesan.

6. Return to the oven and cook until the cheese melts, about 5 minutes.

FINALIZATION AND ASSEMBLY:

1. Remove the “pizza” from the oven.

2. Finish with a drizzle of extra virgin olive oil and decorate with basil leaves.

3. Transfer to the plate or, if you prefer, cut and serve.
