Spinach Cake

- 1/2 cup water
- 1 tablespoon margarine for puff pastry
- 2 egg yolks

- 1 bunch spinach leaves
- 3 tablespoons grated cheese
- 400 g of ricotta cheese cut into cubes
- 2 tablespoons of wheat flour
- 3 tablespoons butter
- 3 beaten eggs
- Salt and grated nutmeg to taste

Preparation method
Pasta
Place the wheat flour, margarine, salt and egg yolks in a container and mix well. Gradually add water and knead pasta until a homogeneous consistency is obtained. Cover with cling film and leave to rest for 30 minutes.
Filling
Fill a pan with water and bring to a boil over medium heat. Add the spinach leaves and cook until lush. Then drain the leaves and chop them. Place the butter, spinach, grated cheese, ricotta and wheat flour in a container and mix well. Lastly add the eggs and mix again. Season with salt and nutmeg. Reserve.
Assembly
Sprinkle a smooth surface with wheat flour and, using a rolling pin, roll out the dough. Reserve. Grease a removable bottom pan with butter and flour with wheat flour, roll out the dough and distribute the mixture. Filling. Place in a preheated oven at 250°C for 30 minutes. Serve immediately.
Spinach soufflé with bacon
ingredients
- 100 g of chopped bacon

- 2 tablespoons of wheat flour
- 2 cups of milk tea
- 1/2 cup grated mozzarella
- 3 egg yolks
- 3 egg whites

Preparation method
In a pan, place the bacon and place over medium heat to fry. When golden, add the onion and sauté until it starts to brown. Add the spinach and sauté until the leaves wither. Reserve. In another pan, add the butter and heat over medium heat to melt, add the garlic and sauté until golden brown. Add the wheat flour and mix well. Then add the milk little by little, stirring constantly, until it thickens. Turn off the fire.
Next, let the mixture cool a little and add the egg yolks, spinach, bacon and mozzarella and mix well. Reserve. In a mixer, whip the egg whites and gently add them to the other ingredients. Reserve. Grease molds with butter, sprinkle with grated cheese and pour in the mixture. Sprinkle the surface with grated cheese and place in a preheated oven at 180°C for 12 minutes. Serve immediately.

- 200 g of cream
- 1 bunch spinach leaves
- 4 teeth minced garlic
- 2 tablespoons of olive oil
- Salt and ground black pepper to taste
- 1 pinch of sugar
- 1/2 teaspoon grated nutmeg
- 1 onion sliced
Preparation method
Add a tablespoon of olive oil, onion, salt and sugar to a pan and cook over medium heat until the onion is golden. Then add the rest of the olive oil and garlic and fry for 3 minutes. Add the spinach leaves and stir until wilted. Then add the cream to the pan and mix. Season with salt, black pepper and nutmeg and cook over low heat until boiling. Serve immediately.
