Low carb Margherita Pizza, made with cauliflower dough
A different pizza with a base of cauliflower and almonds.

Basic ingredients cauliflower
– 800 g of fresh cauliflower, divided into small florets
– 160 g of almond flour
– 2 units of eggs, lightly beaten
– 100 g of grated parmesan
– 2 teaspoons of dried oregano THE
– Salt to taste
– pepper to taste THE
– baking paper to taste (to line the baking tray)
– olive oil to taste (to grease the pan)
Ingredients Homemade tomato sauce
– 2 cloves of garlic, chopped
– 1 unit of onion, chopped
– olive oil to taste
– 1 can(s) of peeled tomatoes, cut into cubes, with juice
– 2 sprigs of basil (leaves coarsely chopped)
– Salt to taste
– pepper to taste THE
Margherita garnish ingredients
– 2 cup(s) of tomato sauce (see recipe)
– 400 g of buffalo mozzarella, sliced
– olive oil to taste
– 4 tablespoons of grated parmesan
Finishing ingredients
– basil to taste (leaves)
PREPARATION:
1. Preheat the oven to 200°C.
2. Start by cooking the cauliflower (see preparation).
3. Then prepare the tomato sauce (see preparation).
4. Slice the buffalo mozzarella. Wash the basil leaves and set them aside on absorbent paper.
PREPARATION:
Cauliflower base (do this step before starting pre-preparation):
1. Separate, wash and drain the cauliflower florets in a colander. Place in the food processor and, using the pulse function, grind into small grains about the size of a grain of rice.
2. Transfer to a non-metallic bowl, cover with cling film and microwave for 5-6 minutes until tender.
3. Spread out on a clean cloth and let it cool.
4. Continue with the preparation of the tomato sauce.
Homemade tomato sauce (do this step before starting the pre-preparation):
1. Peel and chop the garlic and onion. Fry in olive oil in a pan.
2. Add the diced peeled tomato, juice and basil.
3. Add salt and pepper.
4. Cook for about 10 minutes over low heat or until the sauce is very thick, almost free of liquid.
5. Continue pre-preparation.
Cauliflower base:
1. When the cauliflower is hot, turn it inside the tea towel to remove all the liquid.
2. Put it back in the bowl, add the almond flour, the lightly beaten egg, the grated parmesan, the oregano, salt and pepper.
3. Mix very well.
4. Line a mold, preferably round, with baking paper and grease with olive oil.
5. Place the cauliflower mixture in the center of the pan and, using your hands, open it out towards the sides, forming a disc – leave the edge a little thicker to form the edge.
6. Place in the preheated oven at 200°C and bake for about 15 minutes or until lightly browned with a crispy edge.
APPETITE OR DESSERT (optional):
If you choose to prepare an appetizer or dessert, take advantage of the oven time to prepare it.
Margherita seal:
1. When the base is ready, remove it from the oven and let it rest for a few minutes to firm up.
2. Raise the oven temperature to 240°C.
3. Spread the tomato sauce over the base.
4. Cover with slices of buffalo mozzarella and drizzle with a drizzle of olive oil.
5. Sprinkle with grated parmesan.
6. Place in the oven and bake until the cheese melts, about 10 minutes.
FINALIZATION AND ASSEMBLY:
1. Remove the pizza from the oven, arrange it on a plate or cut the pizza into slices and distribute it on individual plates. Do this operation very carefully because the dough is very delicate.
2. Spread the basil leaves over the surface and serve immediately.
