jackfruit meat

  • Greasing oil
  • Water for cooking
  • 3 cloves of garlic, peeled and crushed
  • 1 peeled onion and chopped
  • 1 tablespoon olive oil
  • 1 tablespoon curry
  • 1 lemon juice
  • Salt, olives, green chillies and ground white pepper to taste

Preparation method

Wash the jackfruit well under running water. Apply oil on your hands and knife and cut the jackfruit into pieces. Wash again to remove all the milk released from the fruit. Transfer the jackfruit to a pressure cooker, cover with water. Close the pan and cook over medium heat for 40 minutes after turning on the pressure. Next, remove from the heat, wait for the pressure to release and drain the water. Let the jackfruit cool and remove the skin. Then chop the pulp and set it aside.

In a pan, add the olive oil and place over medium heat to heat. Then add the garlic and onion and sauté until golden brown. Add the jackfruit pulp, curry, olives and lemon juice and mix well. Season with salt, green chilli and black pepper. Brown for another 5 minutes. Serve immediately.

  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon olive oil
  • 1 onion peeled and chopped
  • 1 clove of garlic, peeled and crushed
  • 1 red pepper cut into strips
  • 1 green pepper cut into strips
  • Salt and chopped green chilli to taste

Preparation method

With a spoon, remove the internal skin of the shells (white part). Place the peels in a container with water and vinegar and let them macerate for 15 minutes. Then drain the water and cut the banana peels into strips. In a pan, add the olive oil and place over medium heat to heat. Add the garlic and onion and sauté until golden brown. Add the peppers and brown them for 5 minutes. Finally add the strips of peel and cook until soft. Turn off the heat, season with salt and green chillies and serve immediately.

  • 1 cup of water
  • 50 ml of soy sauce
  • 1 clove of garlic, peeled and crushed
  • 1 onion peeled and chopped
  • 2 tablespoons of tomato sauce
  • 1 drizzle of olive oil

Preparation method

Place the soft wheat flour and a cup of water in a container and mix until you obtain a smooth mixture. Form the dough into a ball and place it in a container. Cover with water and leave to macerate for 8 hours. Next, place the mixture in a colander and wash it under running water until the released water starts to become clear. Drain them well and shape the seitan as you wish. Reserve.

In a pressure cooker, add the olive oil and heat over medium heat. Then add the onion and garlic and brown them. Add the water, tomato sauce and soy sauce and bring to the boil. Add the seitan, cover the pan and cook for 20 minutes after reaching pressure. Turn off the heat and wait for all the pressure to release. Place the seitan with the broth in a container and leave it in the refrigerator for about 6 hours. Then drain the broth, heat the olive oil in a pan over medium heat and fry the seitan for 5 minutes on each side. Serve immediately.

Breaded tofu with nori seaweed

  • 250 g of firm tofu
  • 1 lemon juice
  • 1 clove of minced garlic
  • 1/2 teaspoon soy sauce
  • Salt and oregano to taste
  • Nori seaweed sheets
  • 1/2 cup wheat flour
  • 50 ml of water
  • Breadcrumbs for breading
  • Vegetable oil for frying

Preparation method

Cut the tofu into 1cm thick slices. Place the tofu, lemon juice, soy sauce, garlic, oregano and salt in a container. Store in the refrigerator for 2 hours. In a container, mix the wheat flour with the water until you get a paste. Then wrap the tofu slices with the nori seaweed, pass them in the wheat flour paste and then in the breadcrumbs. In a pan, heat the oil over medium heat and fry the tofu until golden brown. Serve immediately.

  • 1 cup medium soy protein
  • 3 tablespoons white vinegar
  • 1/2 onion chopped
  • 4 cloves garlic, minced
  • 2 potatoes peeled and cut into cubes
  • 1 carrot peeled and cut into slices
  • 1/4 glass of dry red wine
  • 2 tablespoons soy sauce
  • 1 bay leaf
  • 1 cup tomato sauce
  • 1 l of vegetable broth
  • Salt, chopped green chilli, smoked paprika, ground cumin, ground black pepper and olive oil to taste
  • Boiling water

Preparation method

Place the soybeans in a container, cover them with boiling water and add the vinegar. Leave to soak for 20 minutes. Then drain them, wash them under running water and squeeze the soybeans to remove all the water. Heat the oil in a pan and sauté the onion and garlic until golden. Add the soya beans, potatoes and carrots and sauté until the soya beans are golden brown. Add the wine and wait for it to evaporate. Add the soy and tomato sauce and seasonings and mix. Add the vegetable broth and cook over medium heat until the vegetables are tender. Sprinkle with the green perfume and serve immediately.
