Champignon Gnocchi with Gorgonzola Recipe

Ingredients:

  • 2 tablespoons butter
  • 10 tablespoons of wheat flour
  • 1 cube of vegetable broth
  • 1 cup hot water
  • 2 egg yolks
  • 2 tablespoons of champignons drained and sliced
  • 1 tablespoon lemon juice
  • 1 cup chopped blue cheese
  • 1/2 cup grated parmesan
  • Black pepper to taste
  • 2 tablespoons chopped parsley
  • Breadcrumbs for breading
  • 1 egg for breading
  • Fry oil

Preparation method:

  1. In a large pan, melt the butter.
  2. Add the wheat flour and fry for 2 minutes.
  3. Gradually add the vegetable broth dissolved in the water and cook, stirring constantly, until it thickens.
  4. Cook for another 7 minutes.
  5. Add the lightly beaten egg yolks, mushrooms, lemon juice, gorgonzola and parmesan, mixing after each addition.
  6. Cook for 3 minutes and remove from heat.
  7. Add the pepper, parsley, mix and leave to cool.
  8. Form balls with your hands, dip them in breadcrumbs and beaten egg.
  9. Coat them again in breadcrumbs and fry them, little by little, in hot oil until golden.
  10. Drain on absorbent paper and serve.
