The bartender of the Varal bar shares accurate tips for preparing Brazil’s most famous cocktail
No bitterness, excess pomace, sugar accumulated on the bottom or distillate base that descends cutting the throat. With a few basic precautions it is possible to prepare for Caipirinha balanced, refreshing and full of flavour.
For this reason Thiago dos Santos, bar chef of Varal, house in Pinheiros who just announced a special menu of seasonal caipirinhas, remember that the choice of ingredients is as important as the execution of the recipe. In addition to fresh fruit and cachaça, it is essential to have a source of sweetness on hand, lots of ice and, if you want, some spices.
Step 1: Prepare a syrup
“Before we start, I like to prepare a sugar syrupbecause it will help a lot in the dosage and incorporation of the ingredients, avoiding those residues at the bottom of the glass”, explains Thiago. For a perfect syrup, the chef recommends two parts sugar and one part water. Then, add the water on the heat and, before it reaches the boil, add the sugar, mix until it has diluted and becomes a syrup, which you will put aside in a container.
Step 2: Play with combinations
On a cutting board, cut the desired fruits. “I think it’s interesting to play with different characteristics. A lemon, citrusy and full of juice, with a cashew, sweeter and firmer, for example. Or a mandarin with girl’s fingerwhich adds a layer of spice,” he explains.
Step 3: Macerate to size
Pound the chosen ingredients in a mortar. Thiago warns: macerate gently, until the juices have released well; Over-steeping can cause unwanted bitterness from the oil in the fruit’s skin.

Step 4: choose a good spirit
Cachaça represents more than 50% of the composition of the drink, which gives us proof of the importance of choosing this distillate well. To compose the drink, Thiago indicates a basic proportion:
– 60 ml of cachaça
– 15 ml sugar syrup
– 7 ice cubes
– A whole lemon with smooth and shiny peel, cut into French style and without core, delicately macerated
