ingredients

  • 1 beet cooked and cut into half moons
  • 1 fresh plum cut into half moons
  • 1/2 cup mint leaves
  • 1 cup chopped walnuts
  • Juice of 1/2 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon chimichurri
  • Salt and ground black pepper to taste

Preparation method

Wash the mint leaves and set them aside. Place the red beetroot and plums in a container and mix well. Add the lemon juice, olive oil, chimichurri, salt and black pepper. Finally, sprinkle the salad with walnuts and garnish with mint leaves. Serve immediately.

Lettuce salad with sweet potatoes

ingredients

  • 1 yam, peeled and sliced
  • 1 tomato cut into slices
  • 3 lettuce leaves-curly
  • 1/2 cucumber cut into slices
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • Salt, ground black pepper and oregano to taste

Preparation method

Place the yam in a pan, cover with water and cook over medium heat until the vegetable is soft. Turn off the heat, drain the water and set aside.   • 2 cucumbers cut into half moons
  • 1 radish cut into half moons

  • Salt and ground black pepper to taste
