Salvador’s food scene is a true feast for the senses, rooted in the rich mix of cultural influences that characterizes Bahia’s capital. Known for its diversity and authenticity, Salvadoran cuisine reflects the Afro-Brazilian, indigenous and Portuguese heritage that has shaped the local identity.

In the markets and streets of the city, exotic aromas and bright colors attract lovers of good food. Acarajé, an Afro-Bahian delicacy made from fried black-eyed pea paste and filled with vatapá, shrimp and salad, is a gastronomic icon that cannot be ignored.

Salvador’s restaurants offer a culinary journey that ranges from traditional dishes to modern interpretations of local cuisine. Moqueca baiana, a fish or seafood stew with palm oil, coconut milk and seasonings, is a delicacy that mainly highlights the influence of African cuisine. Vatapá, a rich mix of bread, dried shrimp and peanuts, is another unmissable delicacy.

Origin

The first restaurant, by chefs Fabrício Lemos and Lisiane Arouca, brings Bahian food as a concept in a work that combines technique and affective memory, invention and tradition. The menu combines fresh ingredients that make up the heritage that makes Bahia famous for its flavourful table. Smoked meat, umbu, licuri, caatinga passion fruit, aridan beans, yellow uruçu honey, sweet chili pepper and butter cream cheese are some of the ingredients that the chefs present in their creations.

Mango

Created by the chef couple Dante and Katrin, the Manga restaurant lives in a renovated building in the heart of the Rio Vermelho neighborhood. From the creative tasting menu to the breakfast served on Sundays on the outdoor terrace, every facet of the manga reflects the experiences, tastes and style that the Chefs have developed over the course of their careers.

“We want to offer Manga what we appreciate most when we go to a bar or restaurant: finding ourselves in a welcoming, informal and relaxed environment, where food is taken very seriously. Manga, first and foremost, is a family restaurant, designed and dedicated to lovers of good food. The tasting menu is, without a doubt, the protagonist of the restaurant, but we do not give up other aspects of good food that we are equally passionate about: we creatively explore the best products available in their best moments, always respecting of seasonality. From bread, to ice cream, to cured meats, to the herbs grown on our terrace, we try to produce as much as possible within the restaurant, which makes our cuisine extremely personal”, comment Dante and Katrin.

Created on November 23, 2006, Dona Mariquita aims to save the typical regional products served in Bahia’s open-air markets, street food and fresh food. On a journey to African origins, Dona Mariquita rescues original recipes and ingredients, bringing some seafood, seeds and leaves from the Recôncavo of Bahia, mixing indigenous, African and rural influences in search of the true Bahian flavor.

Djalma’s

Near the seafront, in the Pituba neighborhood, in Salvador, an unpretentious environment, but with delicious cuisine, has enchanted residents and visitors since the 80s.
