Recipe for 4 people.
Classic (no restrictions), Lactose Free
Preparation: 2:00 + marinating time

1 pressure cooker, 1 pot(s), 1 cutting board(s), 1 colander(s), 1 baking tray(s) or baking tray(s) (or more), 1 kettle, 1 barbecue grill, 1 juicer

Ingredients PORK RIBS
– 2 kg of pork ribs
– Salt to taste
– pepper to taste
– 2 oranges (juice)
– oil to taste, for greasing.
BARBECUE SAUCE Ingredients (AMERICAN Barbecue)
– 1 tablespoon(s) of oil
– 1 unit of onion, chopped.
– 1/2 cup(s) of apple cider vinegar (or white wine vinegar)
– 2 tablespoons of brown sugar
– 2 cups of ketchup THE
– 2 tablespoons of Worcestershire sauce
– 150 ml of water, filtered
– pepper sauce to taste
– Salt to taste
PREPARATION:
- Separate all ingredients and utensils for the recipe. It can be prepared both in the oven and on the barbecue.
PREPARATION:
Ribs (marinated) (do this step at least 30 minutes before preparation):
- Cut the pork chops into pieces of 3 or 4 chops each.
- Season with salt, pepper and orange juice.
- Place in a refractory dish, cover with cling film and leave to marinate for at least 30 minutes.
- For better result, you can leave it for 8-12 hours.
- Halfway through cooking, turn it so that the seasonings are evenly incorporated.
Ribs (cooking):
- Put a kettle of water on to boil.
- Place the ribs in a pressure cooker and add enough boiling water to cover the pieces.
- Cover the pan and cook for 35 minutes, from when it starts to sizzle – depending on the amount of meat, you may need to increase this time by a further 5-10 minutes.
Barbecue sauce:
- Heat the oil in a pan and brown the onion for a few minutes, until it starts to brown.
- Add the brown sugar and vinegar and bring to a boil.
- Strain to remove the onion.
- Add the ketchup, Worcestershire sauce, water and pepper sauce (optional) and cook over low heat until it thickens slightly.
- Adjust the sweet and sour flavor with a pinch of salt, turn off the heat and set aside.
Ribs (roast):
- Preheat the oven to 200°C or light the barbecue.
- When the ribs are cooked, soft but not falling apart, remove them from the pan.
BBQ Ribs (Oven Finish):
- Place the chops in a greased baking dish or pan.
- Bake in the preheated oven for about 30 minutes or until golden brown.
- Remove from the oven, brush the top with 2 ⁄ 3 of the sauce and return to the oven until the barbecue is incorporated into the meat, without drying out.
BBQ Ribs (Finishing on the BBQ Grill):
- Arrange the ribs on a rack and close it to secure the pieces well.
- Bring it to brown on the barbecue, and when it is golden on one side, turn it to brown the other side.
- Brush 2/3 of the sauce and put it back on the grill, at low height or on the coals.
- Leave the sauce to incorporate for a few minutes, being careful not to let it dry out.
FINALIZATION AND ASSEMBLY:
- It is used for BBQ ribs piping hot, with the rest of the barbecue sauce in a gravy boat..
