Cake with green banana

ingredients

  • 3 eggs
  • Erythritol or demerara sugar 1 cup
  • Clarified butter 60g
  • 1/2 cup almond flour
  • 1/2 cup amaranth flour
  • 1 1/2 cups coconut milk
  • 1/2 cup 70% cocoa
  • 1/2 cup oat bran
  • 60 g of 70% melted chocolate.
  • Baking powder 1 tbsp
  • Vanilla essence

Preparation method

Beat the butter, egg, erythritol or demerara sugar and vanilla essence for about 5 minutes in a blender. Add 70% of the chocolate powder, the melted chocolate, the coconut milk and the potatoes for a few more minutes. Add the flour, beat for a few more minutes and then the yeast.

Filling

Melt 150 g of 70% chocolate and in a separate saucepan melt the green banana biomass (100 g), add a little water if necessary. Then add the biomass and chocolate until you obtain a homogeneous mixture. If you prefer, the topping can be made with 70% chocolate.

  • 120 g of banana puree
  • 20 g of flour or oat flakes
  • 1 egg
  • 1 scoop of whey protein in the flavor of your choice

Preparation method

Mix all the ingredients and beat well. Then, place it in the silicone molds and place it in the air fryer at medium temperature for 15-20 minutes. For the topping, add water and whey protein until it becomes a cream with a “sticky” consistency and then pour it onto the cupcakes.

Banana bread

ingredients

  • 3 ripe dwarf bananas
  • 6 eggs
  • 3 tablespoons peanut butter
  • 1 tablespoon coconut oil
  • 1 cup coconut flour
  • 2 tablespoons of baking powder

Preparation method

Blend everything in the mixer, leaving the yeast for last, arrange the dough in the shape of a loaf of bread in the topping, add the banana and 70% chocolate (pieces) and then cook in a preheated oven for 35 g.

“It is a fruit rich in fiber and helps to fill you up. If you are craving sweets, you can prepare some fruit in the oven or microwave, for example: roasted banana with cinnamon. Cinnamon is a natural thermogenic and helps control glucose”, says Renata in an exclusive interview with Sport Life.
